Pasta recipes??
I'm looking for a good fettucini recipe (or another pasta type) with some sort of a cream sauce (maybe with mushrooms or something).
I'm 12 weeks pregnant and have a bad aversion to meats, so pasta seems to be the only thing I can make during the week and I'm running out of recipes!

Ingredients
* 1 pound rigatoni pasta * 2 tablespoons olive oil * 2 shallots, minced * 1 clove garlic, minced * Salt and freshly ground black pepper * 1 pound assorted mushrooms, (such as cremini, shiitake and button), cleaned and sliced * 1/2 cup white wine * 1/2 cup vegetable stock * 1 cup (8 ounces) mascarpone cheese, at room temperature * 1/2 cup grated Parmesan * 1/4 cup chopped fresh chives
Directions
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. While the pasta is cooking:
Heat the oil in a large skillet over medium-high heat. Add the shallots and garlic to the pan. Season with salt and pepper. Cook until soft, about 2 minutes. Add the mushrooms to the pan and season with salt and pepper. Cook until mushrooms are tender, stirring occasionally, about 5 to 7 minutes. Turn the heat to high. Add the wine and cook for 3 minutes until all the liquid evaporates. Add the stock and simmer until liquid is slightly reduced. Remove the pan from the heat. Add the mascarpone cheese. Stir until creamy. Drain the pasta, reserving about 1 cup of the pasta water, and transfer to a serving bowl. Add the mushroom mixture and the Parmesan. Season with salt and pepper, to taste. Toss well to coat pasta, adding the reserved pasta water, if needed, to loosen the pasta. Garnish with the chopped chives. Serve immediately.

Fettuccini alfredo
10 ounces fettuccini pasta 1/2 cup butter 5 cloves garlic, chopped 1 cup heavy cream 1 egg yolk 2 cups freshly grated Parmesan cheese 2 tablespoons dried parsley
1.Bring a large pot of lightly salted water to a boil. Add fettucine pasta and cook for 8 to 10 minutes or until al dente; drain. 2.In a large skillet melt the butter and add the chopped garlic. Cook on low for about 5 minutes, stirring often, making sure not to burn the garlic. 3.Pour about a 1/4 cup of the heavy cream into a small bowl. Add the egg yolk and beat together; put aside. Pour the remaining cream into the frying pan. Increase the heat to medium-high. As the cream starts to boil, mix rapidly using a whisk. Slowly add the cream/egg mixture. You do not want the egg to curdle. Continue whisking until well blended. 4.Add 1 cup of the Parmesan cheese and continue to mix the cream. Pour in the remaining Parmesan and the parsley, mix until smooth. Immediately remove from stove. Serve over cooked pasta.
It's so much better to use fresh parm cheese, so it's not grainy and the cheese melts and becomes thick, also I add some broccoli or peas!
