pasta salad for dinner?
any ideas on what I can add to it so we can eat it as our main dish? or anything I can make on the side to make it seem like a "heartier" dinner? thanks!

You could add diced chicken, ham, or sausage to make it heartier...
maybe steamed string beans on the side.

Re: pasta salad for dinner?
I buy a rotisserie chicken, cut it up and add to my pasta salad which usually consists of bowtie pasta, feta cheese, black olives and tomatoes w/greek salad dressing.

Re: pasta salad for dinner?
there is a ton you can do with pasta salad.
bulk it up with meats and cheeses.
I make one with black beans, cheddar cheese, grilled chicken, diced avocado, tomatoes, red peppers, cucumbers, red onion with a red wine or balsamic vinaigrette.
that has protein plus fiber so it's very filling.
I also do one with cold cooked tortellini, diced fresh raw baby spinach, fresh mozzarella, cherry tomatoes, and grilled shrimp or chicken.
you can basically throw the kitchen sink at a bowl full of cold pasta. it's easy to add on to and hard to get wrong.
good luck!!!
