penne alla vodka recipe

I don't post on here often but I was wondering if you ladies could help me out.

I want to make penne alla vodka for my twins 1st bday party this weekend. Anyone have a great recipe. The one I make is a fat free recipe so I need a new one and I don't want to just pick one off the internet!

1- 1 1/4 cups heavy cream depending on your cream preference.
1 cup parmesean
Crushed tomatoes 1 lb. 10 oz (I think- I work in grams) can (I do half puree, half diced)
1 onion. medium size
fresh basil, chopped, 1/4 cup
olive oil
1/2 cup vodka
5 or 6 cloves garlic, minced
Prociutto ham (3-4 slices) diced


saute onion, basil and garlic and ham until onion is soft.

add vodka keep covered and

boil for 10 mins. it smells funny, so watch out...


Add tomatoes, 1/2 teaspoon salt 2 tsp sugar. simmer 20-30 mins covered.

Add cream, simmer 20-30 mins covered.

Add ¾ cup cheese towards the end.

Spread on cooked penne>. this pot of sauce is good for 1 lb. pasta and then some. sprinkle rest of cheese on for garnish.

ETA: I do 2 400g cans of diced and 2 400g cans of puree. Sorry for any confusion! Just watch the heavy cream and add to your liking- I'm not sure of my tomato to cream ratio Chat Icon

It was a mistake! I'm a dope.. but THANK YOU!

Here it is:

Chop up a large vidalia and a few cloves of garlic (I really like garlic so I usually do about 7 cloves). Put some olive oil in an oven safe dutch oven and saute the onions and garlic until soft. Add some oregano (maybe a teaspoon or so of the dried stuff) and a good shake of red pepper (more or less depending on your heat tolerance/enjoyment). Saute until the seasoning is incorporated throughout the onion/garlic mix. Add a cup (or so) of Vodka. Cook until the vodka is reduced down to about half of what it was. Add SAN MARZANO plum tomatoes. I do 2 large cans and run them through the ricer. Whatever doesn't get smushed enough in the ricer gets mushed with my hands. Get it good and hot - add some salt and then put the lid on (or cover with aluminum foil) and throw it in a hot oven at about 325 for 1-2 hours.

When the sauce comes out - let it sit to cool. Meanwhile, cook up some pancetta. I like a lot so I usually get a 1/3 lb block and dice it up into very small pieces and fry it until crisp. My sister likes less of it so she usually gets the pre-sliced package and fries and crumbles it).

Make your noodles and set aside.

Use an immersion blender (or a regular blender if you prefer) to blend the sauce into a smooth consistancy. If you use a stand blender return the sauce to the pan when you are done. Add a cup and a half or so of cream and stir until it's the right consistancy. Add some salt and pepper. Stir in the pancetta and the noodles and then add about a palmful of Reggiano Parmesan.

It's delicious.

I make mine by sauting 3 shallots in some oil. Then I add 1 cup of vodka, cook till you don't smell the alcohol smell. Add 2 cans of crushed tomatoes and simmer for a little bit. Add some oregano, salt and pepper. Then near the end I add evaporated milk til it is the color I want it. Usually 2 cans is more then enough.
