I would love to do that with my pictures.
Get at minimum version 7.
To do what you want to do.... its real simple. You take the original color picture. Then make a copy of the original picture as a new layer and place it on top of the original picture. Make the copy thats on the upper lawyer 2 black and white using the greyscale tool. Then just use the erase tool on layer 2 to erase the parts that you want in color and you will see it work right before your eyes.
Takes me about 10 mins to do this. 20 if I want to be precise.
That's what I do!

I use Adobe Photodeluxe Business edition - works the same, my DH had it for work so I've been using that
