please help- what are you making/have made for the week? menu planning..



Ok, i am putting a shopping list together today/tomorrow. i am hoping to go food shopping sat.

please share meals you made this week or the upcoming week!

So far i have Monday's meal set, chicken fajita chilaquiles (rachel ray recipe) with brown rice

need more ideas! thanks!!!!

Chicken/turkey sausage & peppers is popular in my house.

Pasta with peas.

Tortelini with a cream sauce.

Chicken or steak with pepers and onions and sofrito served over rice.

Taco night is a favorite.

These are the most popular ones. I need some new dinner ideas too!

this week we did:

(Sat/Mon) Rotisserie Chicken 2 nights - one night was with crispy potatoes and sliced cucumbers as the sides and the other night was with roasted garlic & parm broccoli

(Sun) Salad... mixed greens, cucumber, tomato wedges, crumbled bleu cheese, thinly sliced granny smith apples, halved seedless purple grapes, candied walnuts with some of the leftover sliced rotisserie chicken breast, with raspberry walnut vinaigrette...

(Tues) We did tomato/mozzarella/basil pesto paninis one night with mixed greens salad (and DH had prosciutto, mozzarella & fig jam on his panini)

(Wed) We had BBQ chicken drumsticks, yellow rice, and biscuits

(Thurs) tonight we're having angel hair and mozzarella-stuffed meatballs

dh cooks.

sunday we had angel hair pasta with peas in a light butter sauce

monday we had leftovers

tuesday we had beef cooked in barbeque sauce which we had with corn and rice and beans

yesterday we had chicken soup - which included potatoes and lentils and corn and barley

My memory is SHOT.. but let me try a recall:
Saturday: Roast Beef, Mashed Potatoes, Gravy, Glazed Carrots, Salad

Sunday: Cheeseburgers, Potato Wedges, Tomato Salad

Monday: Tortellini with Red Sauce, garlic bread and salad

Tuesday: Ground chicken ‘hash’ with poached eggs and English Muffins

Wednesday: Roast Chicken, Macaroni and Cheese, Broccoli and Cauliflower

Tonight: Grilled Margharita Pizza, cucumber salad

Tomorrow: Ropa Vieja, saffron rice

Hmm this week was:

Sunday: Leftover rotisserie chicken w/ Tomato & mozz salad
Monday: Chicken Parm w/ whole wheat spaghetti
Tuesday: DH was away so I had a sandwich and chips haha…bad.
Wednesday: Baked 3 cheese chicken w/ rice pilaf and green beans
Thursday: Shrimp Scampi w/ zucchini
Friday: hmmm TBD.

I'll start from last week sunday up until today.

Sunday: linguine with shrimp scampi. steamed green beans

Monday: pork chops in a cider/mustard pan sauce, mashed potatoes..and green beans again (I forgot to buy spinach Chat Icon -dh was forgivingChat Icon )

Tuesday: roasted bone in chicken breast and roasted veggies (potatoes, carrots, and zucchini)

Wednesday: fish and chips.
fried cod fish fillets on sesame seed buns with homemade tartar sauce.
"chips" were sliced potatoes with olive oil, salt & pepper roasted in oven at 425 until crisp.
sauted zucchini with fresh garlic

Thursday: chicken, spinach, and tortellini soup with baguette

Friday: dh is home and in charge. Chat Icon I'll be home late so most likely reservations. Chat Icon Chat Icon

I will also be preparing my menu for the weekend and next week tomorrow and will update then.

lis - we try to do 3 chicken, 1 pasta, 1 meat, 1 "other" (something meatless... could be black bean tostadas, homemade pizza, etc.)

(there used to be 1 fish in there... but since I'm PG, we don't eat our usual weekly fish since i eat fish on fridays when we go out for dinner)

I get ideas from everywhere! Food network shows like Giada and Barefood Contessa...

I also get tons of magazines: Sunset, Real Simple, Everyday Food, Bon Appetit, Gourmet, etc.

And I love getting ideas from LIF too! Read the "what's for dinner" threads because people always have tons of great ideas!

I just made my list for tonight and the next week of meals are:

Clam Chowder
Bleu Cheese Chicken Lasagna
Stir Fry Chicken & Veg's
Grilled Chicken w/Salad
Enchiladas
Chicken with Stuffing

All made with the slow cooker except the Grilled chicken and salad.

gotcha! yes, i LOOOOOOOVE foodnetwork! i dvr a bunch of shows!
i used to get rachel ray's magazine.

i just get a little fustrated when i see something with too many random ingrediants. i have alot of things on hand but when one recipe calls for this ingrediant i dont have and then another recipe calls for that ingrdiant i dont have .. then my food bill start climbing.. or i'll have left over excess ingrediant which ends up getting tossed....drives me crazy.

i try to vary it up as well! but excellent tip to break it down by 3 chicken, 1 meat, 1 pasta etc

- also, another question, i tend to slack on the sides. like the main entree might be a bit time consuming with the chopping and sauteeing, prep work, so then i just steam a veggie, and thats it.
what sort of sides to you make and how much extra time does it take?

i'm not that great with sides either!

my new thing i love to make is roasted broccoli - it's so much tastier than steamed!

just take your fresh broccoli and cut into florets... big/small whatever... heat the oven to 425.

put the broccoli on a rimmed baking sheet and toss with olive oil, salt, pepper, and chopped garlic.

roast for about 20-25 minutes.

when it's finished, toss with lemon juice, lemon zest, and freshly grated parm. it's SO delicious!

i also like to slice some potatoes with the mandolin and toss with olive oil, chopped garlic, herbs de provence (or whatever dried herbs you have on hand), garlic powder, salt, pepper, and red pepper flakes. then cook them at about 425 until they are nice and tender... then broil for a few minutes until crisp.

--

baked potatoes are pretty easy... just add some sour cream and chives and that's a simple side.

--

we also do salad as a side... just mixed greens, cucumber, tomato, & parmesan shavings.

--

sliced cucumber is good with just olive oil, lemon juice, salt and pepper

--

green beans sauteed with garlic and oil and a splash of soy sauce

--

roasted asparagus is also good... you can just roast at 425 with olive oil, salt, and pepper... or you can add a drizzle of balsamic vinegar to it for some more flavor

--

mozzarella, tomato, and basil - drizzled with olive oil and sprinkled with salt and pepper

--

garlic bread

--

cous cous is SO easy... i like to mix it with chunks of cucumber, tomato, sliced scallions, lemon juice & lemon zest to give it a little extra something

--

rice (we make white or yellow rice in our rice cooker... )


ETA - I wanted to add that for sides that need cooking, I start them BEFORE I start dinner... and I just leave them on the side and then I cook everything together in the oven at once (or put the side into the oven while I cook on the stovetop) so that it's all ready at the same time...

This was my menu for this past week. I have not done my menu for next week yet.

- Pepper Steak w/ brown rice

- Pork chops w/ a mushroom cream sauce, roasted garlicky butternut squash cubes and green beans.

- Lentil soup and crusty bread ( I was going to make a salad as well but was tired).

- Chicken and Dumplings

- Salisbury Steak, mashed potatoes and broccoli.

Not sure if this is a bit late, but last week we had

Baked Salmon Kebabs with peppers and roasted asparagus

Roasted Veggies with Cous-cous with chick peas

Grilled fish with salad

Baked salmon cakes with panko breadcrumbs

Baked fish with tomatoes, garlic and lemon with broccoli

We went out one night and had take out another

This week:

Zucchini, assorted beans and prawn salad with creole spices

Mid-eastern prawns with cous-cous

Baked salmon with a veg

Crab Cakes with spicy avocado dressing

Ravioli

Probably out to eat and take out once.

sorry for the late response! here's this week's..

sat - rotisserie chicken with peas (normally we'd have rice too, but i was making molten cakes for dessert so we didn't want to get too full!)

sun - big salad with romaine lettuce, tomato, cucumber, sopressata, provolone, fresh mozzarella (we eat light on sundays because that's our ice cream sundae night!)

mon - rotisserie chicken with cous cous and cucumber & tomato salad

tues - mushroom and pea risotto

wed - chicken souvlaki

thurs - baked ziti, garlic bread, salad

menu for week of Sat 9/19-Fri 9/25

Saturday: linguine carbonara

Sunday: roasted bone in pork with sauerkraut, potatoes, red anjou pears, and carrots cooked in beer (roasted at 425 after searing meat on the stove..about 1.5 hours)

Monday: grilled tilapia filets, roasted sweet potatoes, sauted spinach

Tuesday: roast pork (we bought a big on on Saturday and split it for 2 meals), white rice, pink beans, salad with sliced avocados

Wed: probably bkfast for dinner while dh is at the U2 Concert.

Thurs: U2 Concert...eating out!

Friday: (cooking for MILS's bday)
homemade shrimp cocktail, roasted chicken with broccoli rabe and fingerling potatoes.
spiced apple cake with cream cheese frosting

Monday: Angel Hair Pasta with Red Sauce, Italian Syle Chicken Sausage, Tossed Green Salad with Basil Vinaigrette, Garlic Bread

Tuesday: Take Away for the boys. I have Parent Teacher Night.

Wednesday: Taco Pie (Soft tortillas layered with turkey chili and rice, cheddar cheese, jalapenos and then baked. Served with sour cream, cilantro and lime on the side as needed). I am serving it with corn bread and a salad of tomatillos and avocado in lime vinaigrette.

Thursday: Chicken Noodle Soup, Bread and Cucumber salad.

Friday: Potato, Spinach & Pancetta Frittata and a melon salad with honey & balasamic strawberries

Saturday: Seared Cod with Baked Tomatoes, Tabouleh salad and a Green & Yellow Squash Sautee.
