Ravioli (easy!), quick homemade sauce (can of crushed tomatoes, oil, garlic, onion, parsley, s&p)

Lemon chicken (franchese)

Chicken Marsala

tacos (taco salad)

I mix together 1/2 lb of ground beef, 1/2 lb of ground pork, 1 grated onion, some fresh minced garlic (4 cloves maybe?), a handful of chopped parsley, red pepper flakes, a big squirt of ketchup, grated parm, 1 egg, salt, pepper, breadcrumbs, a little worcesterchire sauce - i mean, whatever you use to make regular meatballs is fine.

then after you form them into meatballs, just take your thumb and poke a hole in the middle and add a cube of mozzarella (fresh... you can use the kind that come as little balls or the log kind... just make sure it's the fresh one!)

or you can even use smoked mozzarella (but the smell makes me Chat Icon ever since i got PG!)
