please post your homemade pasta sauce recipes
we planted a lot of tomatoes this year-- they're all starting to get ripe. BUT i only eat tomatoes cooked ( weird, i know!), and DH is going OOT for work for 2 weeks... so i thought i would make a sauce with them and freeze it so the tomatoes don't totally go to waste... any good recipes?!? THANKS!!

are you going to peel and jar the tomatoes or are you going to just put them in whole and crush them up?
Also, my 'recipe' includes meat, ie: sausage, pork chops, do you want that too?

i'm not sure- never made sauce completely by scratch before... i guess i was just gonna use them whole and crush them up. and i don't mind having meat in there

if you are going to use tomatoes from the vine, then crush them up and you might want to add some sugar because tomatoes from the vine are a little bitter.
also- if you are not a fan of seeds, you might want to strain the seeds out..
That said: To make a 'pot' of sauce. in my opinion, good enough for a months worth of sauce or about 10pounds of pasta!
Meat- 3 boneless pork chops, 6 sausages, meatballs (if you have them), I sometimes add chicken cutlets too. You can also add some veal chops or cutlets. Anything is good in here!
put one turn of the pan of evoo heat up the oil - med heat add the meat and let brown- turning occasionally, probably for 10-15 mins. meanwhile, chop up 1 onion and 3-4 cloves of garlic until diced. Once the meat is brown, add the onion and garlic. let that brown and mix together with the meat, about 10-25 mins. Once that is complete, add your favorite red wine, or what ever is open. I add about half a cup to 3/4 cup depending on how you like it. this will sweeten your sauce a bit, so you may only need to add a 1/4 to 1/2 cup of sugar, add more as you taste your sauce. After the wine mixes with the meat and onions, add your tomatoes. stir together and lower to low heat. Add one or two pieces of basil, cover most of the pot and let simmer for 3-4 hours stirring occasionally. If you like oregano, add about a teaspoon of that.
My mom taught me to make sauce by taste. so keep tasting it as you stir it. if it is too bitter for you, add some sugar.
If you give up on using the whole tomatoes, I use Tuttarosso Crushed Tomatoes- 5 cans.
