Post Healthy suggestions for dinner
I have no appetite and nothing tastes good so I might as well eat as healthy as I can now anyone have any suggestions? TIA

we're having eggplant stack-ups with porkchops for dinner the stack-ups are healthy and really yummy!
slice eggplant into 1cm slices. fry in very little oil until 1/2 cooked. set aside.
Cut tomatoes into 1cm slices.
find one tomato slice and 2 eggplant slices of similar diameters. Make a 'sandwich'.... eggplant, tomato, 1/3 slice of swiss cheese, eggplant. Sprinkle a tiny bit of garlic, salt, and oregano on top. Wrap in foil (seams on top so they don't leak!) and bake at 400 for about 20 min, until cheese is melted.
