Protein Pumpkin Pancakes

Protein Pumpkin Pancakes

Stole this from one of my favorite food blogs!

They were super yummy!

* 1 scoop protein powder
* 1/2 cup pumpkin (not pumpkin pie filling)
* 1/2 tsp cinnamon (or 1/4 tsp pumpkin spice + 1/4 tsp cinnamon)
* 1/2 tsp baking powder
* 2 egg whites
* 1/2 cup oats
* 1/2 cup + 2tbs water
* 1 packet stevia

Blend everything in the blender until smooth and cook like normal pancakes!

Sounds delish. Did you use store bought canned pumpkin? Whole foods has a great canned pumpkin-100 puree, nothing else.

Went to WF to get the canned pumpkin and hoping to make these the next day or so. Have you tried substituting the protein powder for something else like lowfat ricotta or cottage cheese? I am going to try it your way and also do a mini batch with cottage cheese since I have it in the house. I think it will give it a nice texture too. Can't wait. Hopefully inspiration will bite me in the a$$ tomorrow and I will be motivated go cook lol.

That could definitely work...anything to thicken it up a bit! I found them slightly thin, but they tasted so good I didnt care!

WOW-these were delicious. I prepped the batch right before my morning run so I could make them when I got back.
I didn't even attempt to put the cottage cheese or ricotta in the mix this time. They were waaay to good. I put it on the side instead. This one is going in my recipe binder for sure! Thanks again!!

Im so glad! I jsut whipped up another batch and froze them. I take one out and microwave it as a snack sometimes! SO easy!

I'm cooking so I just measured what I used for you. I used MEt-Rx Vanilla. One of their scoops is 1/3cup.

Carrot Cake muffins
Ingredients

* 8 egg whites
* ½ cup cottage cheese
* 1 tbs vanilla extract
* 1/2 scoop vanilla/plain protein powder
* 1 cup oats
* 2 tsp baking powder
* 1/2 cup Splenda OR 1/4 cup Stevia (I used NuNaturals More Fiber Stevia Baking Blend)
* 2 tsp cinnamon
* 1.5 cup finely grated carrots
* 1/3 cup canned crushed pineapple, drained
* *Optional: 1/3 cup raisins OR 1/3 cup walnuts, finely chopped

Optional Frosting:

* 1 package whipped OR reduced fat cream cheese
* 1/4 cup Splenda or 1/8 cup Stevia
* 1 tsp maple extract OR vanilla extract (for vanilla frosting)

Method

1. Pre-heat oven to 375. Spray muffin tin (12 muffin cups) with non-stick spray. *Note: Do not use paper muffin liners, this batter sticks to them, however, foil muffin-liners work wonderfully!
2. Combine all of the ingredients and 1/2 cup of the carrots in a blender (don’t add the rest of the carrots, the pineapple, or the walnuts just yet!) Blend until mixture is smooth.
3. Pour the mixture into a medium-sized bowl, and gently fold in the rest of the carrots and pineapple, and walnuts or raisins if desired.
4. Spoon batter into 12 muffin tins, filling each cup full. Bake for about 25-30 minutes or until golden brown on top, and toothpick comes out clean. Remove from pan immediately and allow to cool at room temperature.
5. To make the frosting (optional) mix cream cheese, sweetener, maple extract, and vanilla extract together in a small bowl, chill in the fridge while the muffins are baking, and spread on top of muffins after they’re cooled.

I was reading online, and I saw that you can just replace 25-50% of the flour in a recipe with protein powder. So I used the recipe I always do, and subbed 25% of the flour out for protein powder. They came out better than I expected!

I made the pancakes and they were good. I liked them better the next day though. When I first cooked them the middle seemed mushy and I left them in the pan extra long too (because I had tasted the first one & noticed that) but it didn't seem to make a difference. The next day after being in the fridge the middle was much firmer. Yum!!

Yup! i prepare them in advance and let them stay in the refrigerator or even freeze them. I actually eat one as a snack at work and I eat it cold...still so yummy!

Im curious, I have soy protein powder. Is that the same thing as protein powder?

I'm sure that would work...I used hemp protein powder, and it was fine.
