Whats for dinner tonight?!
You guys inspired me to take out my crock-pot: I have the easiest, cheesy chicken recipe going for the first time. Smells amazing, so fingers crossed!

QOTD! 10/10/12
Super, super easy!
2 cans (11 oz) condensed cream of cheddar soup 6 boneless chicken breasts (i used less, didn't have 6 and only feeding 2 people) 1/2 cup milk (i always substitute almond milk) Salt, Pepper, and Garlic powder to taste. (I used a good amount of pepper and garlic because i love both)
Spray crock pot with nonstick stray. Place chicken in. Combine milk and soup in a bowl and mix together. Pour mix over chicken, add salt, pepper and garlic on top (then i mixed around a little) Cover and cook on high for 6 hours.
To make it go until after work, i started for an hour on high, then turned back to low. Smells amazing, so I hope! They suggest putting it over white rice.

QOTD! 10/10/12
Turkey Pumpkin Chili was the plan but I'm in the mood for something lighter. I'm thinking of dijon chicken, rice, and broccoli instead.

That sounds good - I'd put mac/pasta and broc with that and call it a week (leftovers).

GASP! You just completely changed my dinner plans! I have one of those bags of fresh broccoli florets ready to steam in bag. I'mma steam them and throw them in and mix together last minute. I have veggie pasta I can boil too...hmmm.

Re: QOTD! 10/10/12
Crock pot as well, but I am making Chicken Ranch Encihilladas. So the chicken cooks for 6 hours in taco seasoning, ranch seasoning and broth
Then you shred it and add it to the tortillas with some cheese.
Roll up and bake for 20 minutes, then add a sauce of light ranch dressing, mixed with salsa to top it before serving. Super easy and yummy
Oh and you reserve the crockpot liquid to cook the rice in.... delish!
