QOTD! 4/17/13 - Foodie Style!
What is your favorite healthy meal to make, especially for when the weather starts to warm up?

I absolutely love a big fresh salad as my main meal. I especially love making homemade salad dressing to top it off.
A hand full of blueberries, raspberries, and/or strawberries. 1/4-1/2 cup of unsalted cashews 3 tbs flavored vinegar of choice (more if you'd like) I usually also add a splash of 100% pomagranet juice
Awesome, fresh, and the cashews make it super creamy!

I love making Grilled Caesar Salad Tartines with a bunch of grilled vegetables on the side.
Also, portabello caps (marinated) on the grill with some mozzarella melted on top...side of grilled tomatoes and zucchini..
And sangria loaded with fruit counts as healthy, right?...it has fruit after all?

I LOVE grilled romain I top with balsamic glaze & blue cheese crumbles...but this recipe I'll have to try too!
Warm weather is my favorite time to eat, because it's a great time for veggies, fruits, light salads, grilled fish/veggies.

My favorite is chicken stir fry with brown rice.
I cut up skinless boneless chicken breast, red peppers, green peppers and onions and cook it in a wok with a little olive oil, pepper, salt, garlic and onion powder. I serve it over brown rice. So good!

A salad of mixed greens ( kale, spinach and romaine lettuce) with roasted chick peas or kidney beans, a sprinkle of cheese, avocado and chopped pepper or tomato.

Chicken with Grilled Fruit and Veggies served with homemade Rice Pilaf
I like to use the McCormick White Wine and Herb marinade for this meal but you can use any marinade you like. I buy two packets.......one for the meat, one for the veggies.
I cut boneless, skinless chicken breast into strips, skewer them, marinate for a few hours, and then grill.
I cut up red bell peppers and onions into chunks and then throw in a can of pineapple chunks and marinate these as well in the McCormick marinade. Then I grill them on the BBQ in a grill basket. Soooooooo good.
On the stovetop I sauté onions in a little butter until they are nice and carmelized, then I throw in rice, chicken broth, and herbs (salt, pepper, parsley, etc) and let it all cook. Delicious and waaaaay better then over salted rice mixes.
It's a delicious, healthy, summer meal. And soooo easy to make too.
