Quesadilla Spinoff
Anyone have a good recipe? I tried to make one once but it was so dry!

I just used chicken and shredded cheese. I added a little taco seasoning to the chicken, salt, pepper and onion powder. My dh said they would have been good with some carmelized onions.

Same here. I use salsa, too, sometimes.

I sort of wing the recipe, but in general here's what I do (I don't have measurements):
1. Grill some chicken with some taco seasoning as the main thing, salt, pepper. Chop it up into small pieces, leave on side.
2. In mean time, sautee some peppers and onions - I usually use the chopped up frozen peppers from TJ's so I always have a bag on hand and a regular onion.
Once that's all done, take a tortilla, add some cheese on bottom, add chicken and peppers, cheese on top...Add some butter to the pan, cook on one side until it gets golden, flip. And voila.
I like to serve with some pico de gallo, guacamole and sour cream (not all at once usally) but its yummy if you do all at once :D
