Look for recipes using rotisserie chicken.

Re: Quick and easy chicken soup
Boil up some store bought chicken broth with some celery, carrots, an onion (I leave it whole and remove it later), a bay leaf or 2, a dash of dried thyme, salt, pepper. Throw in some rotisserie chicken shredded up - or cook some chicken breasts in the broth. Make noodle of choice on the side (so it doesn't get mushy in the soup).

Re: Quick and easy chicken soup
For super quick, I'll buy a roasted chicken (already roasted from store - love Fairways), or a piece of the chicken, depending on how much you want to make. Shred the amount of meat you want to put in. At the same time, start boiling chicken broth + thin shredded carrots + celery (I never add it because we don't like it) + seasonings. Add in chicken…After carrots get softer, add in noodles (I like using egg noodles), and voila. Super quick and easy.

I do something very similar. I buy the already cooked rotisserie chicken, then I boil chopped celery, carrots and onions and add a cube of chicken bouillon and some pepper. I throw in the shredded chicken and some pasta and it's done!
