Quick and simple vegetarian dishes?
I'm looking for recipes you've tried and have had success with. I've googled a bunch of stuff, but I'd rather try things others have made in the past. I really dislike the texture of tofu (I've tried every level of firmness), so I guess tofu is out.
Suggestions?

Autumn Penne Pasta in a Light Ragu - this is so good. I "vege"fy it by using soy crumbles in place of sausage, or just omit it altogether.
Lasagna Soup - I use veg broth in place of chicken
Zucchini, Black Bean and Rice Skillet - super easy!
Lemon Pesto Pasta with Edamame and Almonds
These are just a few of my go-tos.

My husband makes a super simple black beans and brown rice. Sautee some onion and garlic in some EVOO Add 2 cans of the lower sodium goya black beans Add some white vinegar- to taste. I eyeball it Season with cumin to taste. Heat through. Mash up some of the beans with a large spoon to kind of thicken it
Serve over brown rice.
Comes out so delicious and it's filling.
