quick healthy recipes anyone?
What can I make for dinner that is quick, few ingrediants, and healthy? I always have such a hard time when i come home from work deciding, so we usually end up taking out.
PS, I am allergic to all SEAFOOD.

My favorite really quick recipe is something I call greek chicken. I cut 4 chicken breasts into chunks and saute them in a tiny bit of olive oil, salt, pepper, and garlic powder. As that cooks I defrost frozen chopped spinach in the microwave and drain the excess water. I also chop about 1/2 cup of sun-dried tomatoes (the dry kind, not the kind packed in olive oil). When the chicken is browned and all cooked through (about 8-10 minutes total for 2 inch sized chunks) I add the spinach, 4 oz of crimbled feta cheese and the chopped sun-dried tomatoes. We usually eat it just like that, but you can always serve it with rice or pasta.
Another really easy recipe is my turkey burgers. 1.3 lbs of ground turkey, salt, pepper, 4 chopped scallions and 6 oz. of crumbled blue cheese. Form into 4 patties and cook 5-6 minutes per side in a grill pan over medium heat or until thoroughly cooked.

Boil some egg noodles
Fry up some bacon.. remove and let it drain on paper towels
Sautee some diced onions and garlic in the same pan. If you plan on using carrots or bell peppers, toss it in,
Once egg noodles are done, drain and put into the pan with the onions and garlic
Crumble up bacon and add into pan and put in whatever other veggies you want.. frozen peas or fresh spinach
Let it all mix, and a generous heaping of parmesan cheese.
Done.

Veggie stiry fry or chicken stir fry. Just get Yoshida sauce from BJs and cook a bag of frozen veggies in it. Serve over brown rice. Or cook the chicken in it.

When I need a quick meal - I use the McCormick spice packets. I have tried a bunch and really like them.
