Quinoa Pilaf
1 T veg oil 1/2 C. chopped onion 2 carrots, chopped 1 C. quinoa, rinsed 2 C. veg broth (I use chicken broth) 2/3 C. chopped walnuts 1/4 C. chopped parsley (fresh)
Heat oil in pan over med-hi heat. Cook onion in oil for 5 min or until transclucent. Add carrot and cook 3 min more.
Stir in quinoa and broth, bring to boil.
Reduce to simmer, cook, and cover 15-20 min. Toss together in a bowl with walnuts and parsley. Serve at room temp or hot.

I just found this one last night - it looks really good!
Ingredients:
- 1 cup quinoa - 2 cups chicken broth or veggie broth - 2 ears fresh corn or 1 cup frozen corn, thawed - 15-oz can chickpeas - 1/2 cup of crumbled feta -1/4 cup finely chopped sweet onion - 3 tbsp snipped fresh basil - 2 tbsp snipped fresh Italian (flat leaf) parsley - 1/4 cup olive oil - 2 tbsp lemon juice - 1 cup diced, cooked beets - romaine leaves
Directions:
1. Rinse quinoa in fine mesh sieve under cold running water; drain. In saucepan, bring broth to boiling, add quinoa and return to boiling; reduce heat. Simmer, covered 15 minutes or until broth is absorped. Remove from heat, set aside to cool.
2. Cut corn, rinse, drain chickpeas. In bowl, combine quinoa, corn, chickpeas, cheese, onion, & herbs. For dressing, in bowl whisk together oil, lemon juice, & 1/2 tsp salt & pepper. Add to quinoa; toss to coat.
3. Cover, let stand for at least 1 hour or refrigerate for 24 hours. Bring to room temperature before serving. Stir in beets just before serving. Serve in bowls lined with romaine leaves.
Makes 8 servings (1 cup each).

I made quinoa cakes the other night, like potato pancakes but with quinoa, they were great, the recipe I think I found on Whole Foods Site
