RAVE: Mashed Cauliflower
Made this last night and it was AWESOME! I didn't even use the butter (frankly, I forgot it and glad I did because who needs the extra cals)!

I steamed the cauliflower and used chive cream cheese instead of regular, because that's what I had. DH was even impressed!

I love mashed "potatoes" made with cauliflower instead.
SOOO yummy.
Was turned on to it when DH was doing South Beach diet years ago.

Yes love it, I also was put on to it when I was doing the South Beach diet. Love it too because my DS thinks it's MAsh potatoes and eats it up. Lol

Never thought to do this with cauliflower. I love regular mashed potatoes so knowing this is a healthier option and less carbs that tastes good too is good to know.
