Recommend your All-Inclusive that is not Mexico.
We love cruises so we want something similar, all inclusive, with plenty of excursions (of course we pay for).

We went to Excellence in Punta Cana DR this past Jan and loved it! They had plenty of excusrions. Although we didn't do many, we just wanted to relax on the beach.

We love Couples in Jamaica. We've been to both Couples Negril and Couples Swept Away. They have tons of excursions, and many are included in the all-inclusive price (scuba diving, snorkeling, etc).

We went to the Divi All Inclusive in Aruba. Our room wasn't great, but the rest of the trip was really good. There are a lot of excursion opportunities. I did get sick of the buffet lunches by the end of the week, but I'm not a big fan of buffets to begin with (reminds me of the college cafeteria).
I have had a friend who has gone there a few times since then, and she has said the rooms have been fine, so I guess we just got a bum deal.

We went to Sandals Antigua last May and it was incredible! The most gorgeous beach and lots to do around the island.

My husband and I went to a resort in Brazil called Nannai. It wasn't all inclusive, but bfast, high tea, and dinner were included. But the prices for lunch and drinks with the exchange rate were super cheap. $2 for a beer, $4 for a mixed drink. And there was a lot to do in the area! If you dont mind a long flight to Recife, it is well worth the trip!

Def Excellence Punta Cana. We went for our HM. It was amazing. We plan to go back every 5th anniversary, but we don't know if we can wait till then!

Sandals in St Lucia!! We went there for our honeymoon, it was beautiful and there was a book of excursions.
