Rice and Beans.....
I need a really good recipe for this! One of my coworkers told me to just use yellow rice, red beans and soffrito and it just wasn't that great.......I'll never forget, many years ago, being at a friend's house whose mother made this and it was the best! I wish I still spoke to her!
Can anyone help me out? I will say that there were NO tomato or onion chunks in it -- at least not that I saw, maybe they were small (which is probably why I loved it so much, I hate big chunks of tomato)

I usually follow the recipe on the back of the can of red beans or black beans from Goya!
they turn out the best!!

I have a recipie but it's not to fancy however my dh loves it. I just make white rice in a pot then in another pot I use red kidney beans and some sofritto then then toss some grilled chicken (cut small and already cooked) in with the beans. Then I simmer it for about 20mins or until hot I just pour it over the rice.

Mixed Rice and Beans (how my family makes it)
Put a little bit of oil in your pot Add: Onion Garlic Green Peppers or you can add sofrito I like to add a chicken buillion(sp?) Tomato Sauce Sprinkle a little bit of Oregano
Once it is refrying Pour the can of beans (with the water) to the pot Add half the can of beans full of water Wait until it boils.
Add two cups of rice.
Once the rice is almost dried (move the rice) Lower the heat and cover your pot. The rice and beans should be ready in about 30 minutes.

I use the recipe on the low sodium black beans goya can....except I leave out safron and add cumin
