roasted chicken

i'm only having 4 people over for Easter so i was thinking of making a roasted chicken....but i've never made it before. is it enough to feed 4 - 5 people (with other sides as well) and is it hard to make? how do you make your roasted chicken??

Omg, the easiet thing ever to make. I clean the bird, cold water and lemon. Put it in a roasting pan, i slip a few pats of butter under the skin so it crisps while cooking. I also add some italian seasoning on top. Cover and bake. I buy small perdue roasters, maybe 2-3 lbs. Cook about 2-2.5 hours and done.


Oh, and dont forget they put the organs and neck in a bag inside the bird Chat Icon take them out Chat Icon

Such an easy thing and perfect for a small group!
Make sure you get everything out of the
cavity and butt... and clean it.

I like to stuff the cavity with a few cloves are garlic, a quartered lemon, and sprigs of thyme, rosemary and sage. salt and pepper on the outside, I even like to put some garlic powder too! Put a couple quartered onions and a little water in the bottom of the pan, it will be a great base for homemade gravy when it mixes with the drippings!!!

It's really easy to make! I've been making the one on Pioneer Woman, and it tastes really good!

I agree. Very easy. But I wouldn't think a roasted chicken would be enough for 5 people, especially as a holiday meal. JMO.

thanks! i was concerned it wasn't enough...i can add another meat dish or maybe do sausage mac n cheese?

I think if you have stuffing, mashed potatoes, biscuits, veggies, etc, you will have plenty!
or you mac and cheese and some other sides!

I second this recipe, I just made TWO chickens for 6 people. sides were baby carrots and baby red potatoes and salad.
You can do 2 checkens just as easily as one... this recipe is awesome!!!
