Re: roasted veggies for thanksgiving?
my mom makes mashed turnips. always has. and I've ALWAYS hated them.
I have a recipe (at home but I will look for it if you like online) for a galette with potatoes, turnips and celeriac (celery root) that I am tempted to give a whirl.
I am also probably going to roast brussel sprouts with pancetta. it's dreamy.

Re: roasted veggies for thanksgiving?
I do Brussells but was thinking of carrots or carrots and turnips or something.
A man on the train I was sitting next to was reading Cooks and I saw a roasted veggie recipe but couldn't really see well enough to make it out.
Inevitably when I try to ask someone about something they are reading (male) they think I'm interested in them!

Re: roasted veggies for thanksgiving?
You can use pretty much anything, I usually do root veggies - red or white potatoes, sweet potato, parsnips, carrots, sometimes turnip. Toss with olive oil, s&p, garlic, rosemary, whatever else and roast in the oven.
Brussel sprouts are also a fan favorite in my house, I have a recipe if you want.
