Roasting a chicken...Help!
How the heck do I do this LOL
I have a deep dish covered baker....do I put veggies in with it? Do I season it? How long do you cook it for?
it is a small 3-4 pounder they were on sale at pathmark this week....I never made one

I season mine with olive oil and salt and pepper. In the cavity (after removing the yucky stuff) I put a quartered lemon and fresh rosemary. I put the veggies right in the same baker (I use a roasting pan - uncovered) after also seasoning them with olive oil and s&p.

I put some onion, carrot, celery and maybe a lemon or orange all cut into chunks in the cavity - I don't eat those veges though.

My recipe is on the thread that Felice linked. I want to add that I use a rack so the chicken isn't sitting in the grease.
