Salmon

I am going to make my self a piece of salmon for dinner...What type of seasoning should I use? How long do I broil it and on what temp?

There is skin on the bottom, do I leave it on?
Thanks,
Scott

Re: Salmon

Take fresh dill, soy sauce, a tiny squeeze of lemon and 2 tsp. of mustard. Mix it and let the salmon marinate in it for a hour. Broil it in the broiler and you have a wonderful and easy dish! Pair it with a rice pilaf and grilled veggies. Chat Icon

ETA: Take the skin off before you marinate it. Use PAM spray and reynolds wrap to broil it.

Re: Salmon

Baked Salmon Fillets Dijon (recipe from allrecipes.com)

INGREDIENTS:

* 4 (4 ounce) fillets salmon
* 3 tablespoons prepared Dijon-style mustard
* salt and pepper to taste
* 1/4 cup Italian-style dry bread crumbs
* 1/4 cup butter, melted

DIRECTIONS:

1. Preheat oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil.
2. Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet, and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.
3. Bake in a preheated oven for 15 minutes, or until salmon flakes easily with a fork.

Re: Salmon

when we don't have any of the ingredients in the above recipes, we just marinate the salmon in some italian dressing, then bake.

Re: Salmon

This one looks pretty good too:

Baked Salmon

INGREDIENTS:

* 2 cloves garlic, minced
* 6 tablespoons light olive oil
* 1 teaspoon dried basil
* 1 teaspoon salt
* 1 teaspoon ground black pepper
* 1 tablespoon lemon juice
* 1 tablespoon fresh parsley, chopped
* 2 (6 ounce) fillets salmon

DIRECTIONS:

1. In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
2. Preheat oven to 375 degrees F (190 degrees C).
3. Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Re: Salmon

My hubby has the BEST salmon recipe. He bakes the salmon in a tin foil pouch. Put some oil on the tin foil, and season the fish with salt, pepper, paprika and garlic powder. Let it cook in the tin foil pouch for 20 minutes. After about 20 minutes, open the pouch. Put on the salmon some soy sauce and maple syrup (trust me, it's delic). Let it cook without being enclosed in the foil (i.e. open the foil bag and let it cook with the top down). Cook for another 5-10 mins. It's soooooooooo yummy.

Re: Salmon

I like moister salmon so I put the fillet on a bed of lettuce and then put margarine, paprika, lemon juice, and pepper on it and then cover it with some more lettuce. I put it in an oven set between 350-375 for about 15 minutes depending upon the size, cut open and then cook about 10 minutes more if needed for a larger piece. I use a lemon dill salad dressing for a dip and serve it with white rice and a veggie. Sometimes I use onion or garlic powder on it for a different taste.

I remove it before marinating it. Just use a really good knife and the skin should come off no problem.

Re: Salmon

I just marinate it in lime juice, olive oil, salt and pepper and then grill it (I have a grill pan for the stove), skin side down first, then flip it when it's turned lighter halfway up. I like it on the rare side.

how big a piece is it? is it a fillet where one side has skin and the other is pink or does it have skin on all sides as a round piece with pink on top and bottom?

Re: Salmon

how big is it? I usually get an amount that is the size of 2 -3 hands (mine are on the small side) and I cook for about 15 minutes until flaky.
