Salmon side dishes?
What can I make with salmon that is not a potato or rice??? I was thinking of some kind of rice noodles or something, but not sure how to prepare...

Sometimes I'll saute fresh green beans with a little bit of olive oil and almonds. It's really yummy.

I like sauted spinach. I saute garlic in olive oil then add the fresh spinach. Just before I serve it I sprinkle crumbled feta over it. So good!

Sauteed fresh spinach in Garlic & oil and a baked sweet potato is what i make w/ salmon.

I say go for the spinach, with garlic and a bit of olive oil. You can also do asian style vegetables and put the spinach, then the veggies, then the salmon on top.

Ditto on the asparagus. It is good steamed, but if you are having a hankering for something *spiffy* it is also good with Hollandaise sauce.
