Scallops and chorizo
I have these two things. Anything to make with them or am I crazy?

you could also do a twist on a bacon wrapped scallop.
trying to think about how best to do this, but you could layer slices of chorizo on a large baking sheet and put the scallop on top and roast them.
if you want that nice cripsness from the chorizo, maybe precook them a bit to burn off some of the fat....depends on your chorizo really.
serve it with sliced sheeps milk cheese like manchego and bread. maybe a salad or some sauteed greens to go with it.

My DH made me amazing quesadillas once with grilled shrimp and chorizo. I would totally throw the scallops in there instead of shrimp. He made a chipotle/avocado/sour cream sauce to go with it that was to die for!
