Side dishes
Anyone have any good recipes? I feel like DH and I eat the same side dishes over and over again. It's either egg noodles, some kind of potato, rice, stuffing and can't think of what else. I am embarrassed to say I probably haven't made a vegetable (other than corn on the cob which doesnt even count) with dinner in months DH is NOT a fan of veggies, but I need to start making them with meals the way I used to. DH and I both need to lose a few lbs. since I had the baby.

asparagus -either with sprinkled bread crumbs and put in the oven,or cold with balsamic vingegar and wrapped in prosciutto
Rice- but put beans on top- I usually do kidney beans
Garbanzo beans- drain can, put on tin foil sheet, roll around in any seasoning you like, I usually do a little olive oil, paprika, salt and pepper ...put in the oven for about 12 minutes...
mashed potatoes and string beans
sliced tomato, with mozzerella and basil, a little salt and pepper
Avocado Salad- cubed tomatoes, avocado, red onion, squueze lots of lemon, a little olive oil, and a bit of salt if you want- mix up...YUM
oven roasted sweet potatoes cut, drizzle with oilive oil, salt and pepper, a little butter (if you want) on top of each potatoe- put in oven, til soft on the inside and a little crispy on the outside- I always check around 20 minutes and then 5-10 minutes later it is done
Broccoli with lemon- served cold! Cook the broccoli...squeeze lots of lemonson top, a little garlic...refrigerate til cold
string beans and potatoes- my mom makes this and I love it- don't know how but I can ask her...
stuffed artichokes- I don't have my mom's recipe- but I love when she makes it
stuffed mushrooms- I don't have my mom's recipe, but can get it if you want
sometimes when I don't have time or I am just too lazy, I get the frozen bagged veggies and boil them up and just add salt and pepper, sometimes lemon pepper-
garlic bread
fried eggplant
