remember, when Gulliver traveled....

So plans have changed and we are NOT hosting Christmas Eve

we are instead going to my cousins (who is very preggo). I offered to bring a vegetable dish and I am not at a total loss...I have no idea what to make.

I want to please the masses, but make something yummy to.

ideas are welcome!

Spicy Roasted Brussel Sprouts

Preheat oven to 350 degrees

3 pints Brussel Sprouts - rinsed, take off outer leaves, cut off ends and then cut in half
1 head of garlic, separate, remove paper and cut each clove in half
Olive Oil
Kosher Salt
Fresh Ground Black Pepper
Fresh Ground Red Pepper Flakes

Toss everything together in a bowl to get a good coating on them
roast them cut side down on a baking sheet for 15 minutes.
Toss around and roast another 15 minutes.

Finish off with a pinch more kosher salt.

They will be caramelized - salty and spicy yet sweet underneath

Glazed carrots... perfect side for almost anything - beef, pork, poultry

This is a recipe for two but this is the type of recipe that you just wing...

1-1/2 cups baby carrots
3 tablespoons honey
2 tablespoons brown sugar
1 teaspoon lemon juice


Directions:
Place 1 in. of water in a saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender. Drain. In a small skillet, combine the honey, brown sugar and lemon juice. Cook and stir until bubbly. Add carrots and stir until well coated. Yield: 2 servings.

A crowd pleaser (at least my crowd).

Green Bean Casserole
Ingredients:
1 (10 3/4 oz.) can CAMPBELL'S® Cream of Mushroom Soup
3/4 cup milk
1/8 tsp. black pepper
2 (9 oz. each) pkgs. frozen cut green beans, thawed*
1 1/3 cups FRENCH'S® Original or Cheddar French Fried Onions



Directions:
1.MIX soup, milk and pepper in a 1 1/2 -qt. baking dish. Stir in beans and 2/3 cup French Fried Onions.
2.BAKE at 350°F for 30 min. or until hot.
3.STIR. Top with remaining 2/3 cup onions. Bake 5 min. until onions are golden.


Tips
1.Tip: You may substitute 2 cans (14 1/2 oz. each) cut green beans, drained or 4 cups fresh, cooked cut green beans.
2.Look for FRENCH'S® French Fried Onions in the canned vegetable aisle!
3.Nutritional Analysis Per Serving (prepared with 1 % milk): 167 Calories, 9 g Fat, 4 g Saturated Fat, 0 g Trans Fat, 3 mg Cholesterol, 3 g Protein, 15 g Carbohydrates, 3 g Dietary Fiber, 439 mg Sodium

Serves 6
