Quite honestly, I'd make a Mexican "Lasagna" that you could prepare ahead of time, rice with salsa and sour cream mixed in, corn bread and a salad.
That's what I made for a large group on Saturday night and I made it all ahead of time, just had to heat up the lasagna and corn bread and rice

A rice dish...easy and makes a lot. Rice with chiles?
Or a Mexican Corn side dish, so that too can feed a lot. Corn with chiles, peppers etc.
If you want me to find you reciepes for either, Let me know I will. Im sure I have tons too. Love Mexican.
Salsa and chips is good too..Guac could be $$ cause you would need quite a few Avacados.
