Re: Struffoli (Honey Balls)
This is the recipe I used today...
2 cups flour 3 eggs 1/4 tsp salt 2 cups oil 1 cup honey 1/2 cup sugar
Place flour in a large mixing bowl and make a well in the center. Add eggs and salt and knead until smooth. Rest dough for 10 minutes. Roll out dough on lightly floured board until 1/4" thick. Cut into strips and cut to roll tiny balls. Heat oil to 350 degrees. Drop a few balls into the oil and cook until golden. Remove and drain. Combine honey and sugar in saucepan and boil for 2 minutes. Add fried dough and stir for one minute. Remove to dish and arrange into a tree shape...then sprinkle with the colored sprinkles.
It's a bit messy...but oh so worth it!!!!!!

Re: Struffoli (Honey Balls)
my mom makes it this way but I had to get the measurements from the internet.
3 large eggs 1 tablespoon butter softened 1/2 cup sugar plus one teaspoon 2 cups flour 1/2 teaspoon baking powder 1 cup honey vegetable oil colored sprinkles
Directions Whisk together eggs, butter, 1 tsp sugar until foamy. Add baking powder. Add flour. Work the mixture into a soft dough with your hands. Divide dough into 4 pieces. On a floured surface, roll each piece into a rope about the width of your index finger and 12 inches long. Cut the ropes into 1 inch pieces. Toss the pieces with enough flour to dust them lightly and shake off excess flour. Heat oil to 375 degrees in a deep fryer (my mom doesn't have a deep fryer so she just uses a regular pot & fills it with oil) Fry the struffoli a few handfuls at a time until they puff up and are golden brown. Using a slotted spoon, transfer to a paper towel to drain.
Combine the honey and the 1/2 cups sugar in a large saucepan over low heat. Stirring until the sugar has dissolved. Keep warm over low heat. Add the fried balls, a few at a time, and turn them with a wooden spoon to coat on all sides. Transfer the balls to a large platter and mound them into a pyramid, shaping with wet hands. Sprinkle with the colored sprinkles and let stand for 1 to 2 hours. Then just break off some pieces with your hands to eat.

Re: Struffoli (Honey Balls)
Your post got me hunting and I came across this on food.com. Sounds delish. Trying to convince dad to make it since this is his annual "job."
Ingredients 3 1/2 cups flour 6 eggs, plus 1 egg yolk 1 lemon, zested and juiced, plus 1 lemon, zested 1 orange, zested 1/2 teaspoon salt 1 tablespoon limoncello 4 cups canola or peanut oil, for frying 2 cups honey Powdered sugar, for dusting Directions In a mixing bowl, place flour, eggs, yolk, zest of 1 lemon, orange zest, salt, and limoncello and mix well to form a firm dough, 8 to 10 minutes. Place in the refrigerator and allow to rest 30 minutes.
Remove from the refrigerator and cut golf ball-sized pieces of dough from the main batch. Roll each ball into a 1/2-inch thick dowel (rope) and cut each dowel into 1/2-inch pieces. Roll each piece into a ball and continue until finished with all dough.
In a 12 to 14-inch skillet with at least 3-inch sides, heat the oil to 375 degrees F. Drop enough balls in to cover about half of the surface of frying oil and cook until dark golden brown. Use a slotted spoon to turn them regularly, and expect them to puff up while cooking. As they finish, remove them to a tray covered with paper towels, and drain well. This should take at least 5 batches.
When all of the struffoli are cooked, heat the honey, lemon juice, and zest together in a wide 6 to 8 quart saucepan until quite warm, about 150 degrees F, and substantially thinner. Add struffoli to honey and stir carefully until well coated. Remove from heat and allow to cool 5 minutes in the pan, stirring regularly. Pour out into a large serving tray in the form of either a pyramid or a ring mold. Sprinkle with powdered sugar and serve. ix
