Subbing eggs in a brownie recipe?
Hi, I want to make brownies from a mix, but I dont have eggs. It calls for eggs, oil and water. Can I sub something for the eggs?

1/4 c of applesauce and a tsp of baking powder
or I know this sounds nasty but take a can of black beans (undrained) and put in a food processor and process until smooth, then add to brownie mix and follow cooking instructions on box.
They turn out great!

you need a binder since the egg acts like a binder.
for baked goods: banana or a combo of 1/2 banana & 1/2 cup soy milk apple sauce silken tofu (really good for brownies since it is dense)
I found this recipe online to make 'egg substitute' in cake: 2 tbsp. flour 1/2 tbsp. butter 1/2 tsp. baking powder 2 tsp. water

yes - once you use the mixer it all goes together

Thanks for the suggestions.. we don't have bananas either Still haven't made it to the store after vacation so we're low on stuff. I'm going today so I'll just get some eggs to make it easy!!
