Crock Pot Barbeque Chicken

Ingredients:
4 4 oz. skinless, boneless chicken breasts (could be frozen)
1 cup barbeque sauce
1 can Diet Coke

Directions:
Put all this in the crock pot and cook all day.

Notes:
You can also shred this for sandwiches.

Ribs Recipe!

Canola oil or vegetable oil
2 small red onions, finely chopped
3-4 cloves garlic, peeled and minced
1 lemon, juiced
1 cup brown sugar, packed
½ cup cider vinegar
1 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon hot pepper sauce, or to taste
½ teaspoon chili powder
2 racks of baby back ribs, cut into 3-4 rib pieces
Directions

1. In a skillet placed on stovetop set to medium heat, heat oil. Add garlic and onions and sauté until softened and lightly browned. Stir in remaining ingredients and simmer gently for about 5 minutes. Remove half the sauce to use for serving.
2. Transfer stoneware to slow cooker heating base. Add ribs and sauce, cover, and cook on Low for 7-9 hours or on High for 3-5 hours.
3. To serve, cut ribs between bones and pass extra sauce.

Taco Junk

1 Pound Ground Turkey, cooked, rinsed and drained
1 (11 oz.) Cans Whole Kernel Corn, drained and rinsed
1 (15.5 oz.) Can Great Northern Beans, drained and rinsed
2 (.4 oz.) Packages Ranch Salad Dressing (Dry Mix)
1 (10 oz) Can Rotel Diced Tomatoes and Green Chilies
1 (16 oz.) Jar Salsa (hot, medium, or mild)

Mix all ingredients together. Place in crockpot and cook on high for 4 hours. You can server this with baked chips, in a taco salad, etc. I put it on baked tostada shells with fat free refried beans, lettuce, onion, and fat free sour cream.

Serves: 16 (1/2 Cup Each)
