Summer Salads
What are some of your favorite salads for the summer?
I am currently obsessed with one that I copied from a poolside restaurant in Miami:
Marinated Grilled Chicken (I use a citrus marinade because it goes with the other ingredients)
Baby Greens/Arugula
Fresh Mozzarella
Grapefruit and/or Orange pieces (either one is delcious)
Sea salt
Pepper
OMG, it's so simple but it's AMAZING. So refreshing.
I don't even use dressing, just a little olive oill with some salt, pepper and garlic powder in it and I drizzle it on or dip my fork. No vinegar.
It's my current obsession and I can see myself eating it by the pool all summer.
Looking for some other ideas too. What kind of entree salads are your go to ?

I love beets with goat cheese, sunflower seeds and edamame - either mixed with salad greens or string beans - and a red wine vinaigrette

I love a simple cucumber salad to go with grilled chicken or fish. It's so refreshing.

I like quinoa with cucumbers, tomatoes, feta and a lemon or balsamic vinaigrette.
Two other favorites for me are Mexican bean salad and quinoa salad with spinach and berries

Arugula - chopped apples - shaved parm - salt - lemon juice - olive oil - cracked pepper
I make pasta salad and add cucumber, gets, and Greek seasoning (oil based dressing)
Zucchini noodles in lemon juice and olive oil with parm
Chipotle chicken salad. Assorted chopped veggies, noodles, beans, roasted corn. Dressing is ranch, cilantro, chipotles in adobo.

I make many.
However, if I am on the go; and have not much time; I go to Wendys.
It's the Strawberry Mango Salad w/ Grilled Chicken, greens, Feta. Comes with roasted Sunflower Seeds and a citrus dressing.
I find it so delicious.......

I have a hard time with most salads out at restaurants because I find they are always adding some kind of cheese from a goat like goat cheese or feta or some kind of cheese that stinks. I can't be near anything like that. I can't even have it touch the lettuce. I gag.
I once had a waitress take a salad in the back and rinse it to get the Cesar dressing and cheese off it. (It was an event where the hosts pre-picked the salad)

Chopped brussel sprouts and Kale Dried Cranberries Golden Raisins Chopped Bacon (Turkey Bacon if want healthier) Cubed Manchego or Swiss Cheese Any type of glazed nut- almonds, pecans, walnuts. Toss with poppyseed dressing
Sooooo Good!! Even my husband who wont touch a vegetable devours this salad

That does sound good! Funny you mentioned about the turkey bacon though. I follow a dietician on Instagram. She has these cool posts about the nutrition info in "this" vs "that". Like a Satrbucks Frapp vs a Skinny Vanilla Latte etc
And turns out- regular bacon and turkey bacon are exactly the same calories, fat, protein wise EXCPET the turkey bacon has MORE sodium. I have to find the comparison and post it. Turns out turkey bacon being healthier is just a fallacy!

Right? I found it strange too. Turkey burgers often contain more fat than lean ground beef burgers too.
