I'd pack them up secretly and do the Mickey Mouse pancakes the morning of. Let those get the ball rolling...
To make it easier on yourself, make a list of what you couldn't pack beforehand and get it all together right before you leave.
You must tape their reaction to the news!!

I would figure out someway to pack for them, and then tell them you are going out to breakfast or something. When you get to the airport I would then surprise them with the fact that you are going to Disney.

Oh I've tried so many times to just surprise Nicholas and get on the plane and go, but it never worked out. I always had to use WDW as a bribe.."if you don't clean your room, you aren't going to WDW, etc."
I just wouldn't tell them until you get to the airport!!

My mom packed when we were sleeping and then told me and my sister she had to drop off all the luggage at so and so's house cuase they were going on vacation...we had been on the road for an hour when my dad pulled out the tickets to where we were headed and was like what is this?? i cant read the directions..then gave it to me and my sister to read and we started screaming when we learned we were going on vacation..
it was one of my best memories ever..

There's a first time for everything. I don't think a 5 and 10 year old would question it.
I still vote with the crowd that says just don't tell them ANYTHING until you spill the surprise (whether you tell them the day you leave or the day before).
This is what I was thinking. You and DH know you don't go on any business trips, but the KIDS don't know that!!!!
You can make up some kind of conference that one of you has to attend and make it sound really, REALLY boring. So you decided to make a family vacation out of it. The 10 y/o might question it but if you make it believable I think you'll get that surprise that you're looking for!! Good luck and let us know how it goes!!!
