Thai Peanut Chicken for Crockpot
Made this last week for the first time. Yum- o Another easy dish to make.
Thai Peanut Chicken
A spirited combo of coconut milk, peanut butter, and lime juice headline a sensory sauce that’s just the right blend of sweet and tart. It’s a good dish for company, producing a definite wow factor as guests walk in the door.
1 ½ cups converted rice, uncooked, Uncle Ben’s 6 boneless skinless chicken thighs, cut into 1-inch pieces 1 can (14.5-ounce) low sodium chicken broth, Swanson 1 can (14-ounce) coconut milk, Thai Kitchen 2 tablespoons Thai seasoning, Spice Islands 5 tablespoons creamy peanut butter, Skippy 2 tablespoons lime juice, ReaLime (i used fresh) 2 scallion, sliced, plus extra for garnish
1. Place rice in the bottom of a 4 or 5 quart slow cooker. Add chicken.
2. In a large bowl, whish together all remaining ingredients. Pour mixture into slow cooker and stir thoroughly.
3. Cover and cook on LOW setting for 3 ½ to 4 ½ hours.
Serving ideas: Garnish with sliced scallion and wedges of fresh lime.
I also made steamed snow peas mixed with olive oil and black pepper

Converted rice cooks faster than regular rice ( I think)

I couldn't find the seasoning either. I finally found some thai paste that had the same ingredients as the seasoning. We were disappointed with the dish though. I wouldn't make it again.

Re: Thai Peanut Chicken for Crockpot
I found the spice online, i can't find it in any stores and have been dying to do this recipe, it's currently in the crockpot but unfortunately had to use a thai curry simmer sauce because it's all they had....will make again with the right seasoning though...

Re: Thai Peanut Chicken for Crockpot
This sounds good! I might try it next week. I would use a spoonful of thai curry paste (red or green) if you can't find the spice, its best if you fry the paste for a few minutes, that really brings out the flavor!

Re: Thai Peanut Chicken for Crockpot
I did find a Thai Rub at Fairway, just had to add Chili Powder. Came out pretty good, might try again without putting the rice in the crock pot.
