Thank you all for your royal icing help!!
We just had our Mardi Gras party on Friday and it was a great success even the cookie decorating! I was surprised at how many people wanted to do it! lol! And my royal icing was awesome- it stayed perfectly in the bags, wasn't too thick, but hardened relatively quickly once it was on the cookie. I was proud as punch.

ETA: OH! And of course I made Red Velvet Truffles, too.

I'm glad it all worked out. Those cookies look fabulous (as well as your whole setup there).
And yummy red velvet balls. Are those the same recipe as Bakerella's?
Was your boss satisfied?

Thank you!!! Yupp, I used Bakerella's recipe for the truffles- though I use a little less frosting than she does- DH and I prefer them to be a little more cake-y.
My boss was very pleased! She was a little bit cranky leading up to the party , but once it got started and everything was going so smoothly, she relaxed and enjoyed herself.

I actually just used the royal icing recipe on inside of the Wilton Meringue Powder can. I had brought my own from home but my boss wanted me to use this recipe. The only thing I did differently was I added maybe 3 more tablespoons of water to thin it out a little bit. It was WAYYY too thick with the original recipe.

That's the one I was going to use! But my boss insisted and ya gotta pick your battles. lol!

looks like it was a great success!!! congrats!
just a side note, i think the majority of royal icing recipes will start out thick..but for cookies you definitely need to thinnen it out with water

Trust me, their recipe was so thick that it looked like chunks of play-doh in a bowl. It wasn't even remotely icing!
