Royal Icing Anyone?
I want to make Royal Icing for my son's birthday party (they are decorating cookies) Saturday. The party is on Sunday. Does anyone know if this icing will hardens or gets separated or soupy over time or should I be able to make it in advance?
If it's not going to sit well, does anyone have a different icing recipe to recommend?

Im pretty sure Martha stewart has one on her website, and so does Wilton.
i think wilton might already sell the royal icing premade at Michaels / AcMoore

I am pretty sure they do. I have never personally worked w/royal icing, but I believe it will harden w/time. Think of all the mass produced iced cookies they sell for months at the stores.

Royal Icing typically gets hard pretty quick.
I have made this icing before:
1 cup confectioners' sugar 2 teaspoons milk 2 teaspoons light corn syrup 1/4 teaspoon almond extract assorted food coloring Directions: 1. In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup. 2. Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.
I think you'd have to make it pretty close to when the decorate, but like the recipe says, if it becomes thick add more corn syrup.
Wilton also sells cookie decorating icings in assorted colors like this:
You can probably find them at Michaels or AC Moore.

I'll be honest, I did what felt like a zillion cookies for DS' first birthday and not only was the darn icing a wholly mess, but it never quite got entirely hard on the cookie for quite sometime. The batch of icing does tend to harden quickly. DH who was helping with the green had better luck using the cookie icing you can find in the supermarket baking aisle

As long as it's in an air tight container, it shouldn't get hard. It hardens being exposed to air. I put them in squeeze bottles and have not had a problem. I do keep them air tight though.
Icing to decorate cookies is fun for kids too.
ETA: When meringue powder has the recipe in the box.

Jess, thanks for the recipe! I tried this out last night, and the icing was perfect to use this morning, so I'll probably use your suggestion. Very sweet too--the kids will love it! I did add more milk--was it 2 tablespoons? But yummy, and it didn't harden too quickly.
