Try adding natural peanut butter to items for added protein and calories.

I agree with the article AP mentioned. That focuses on proteins. Stay away from carbs, since they aren't doing anything but raising his blood sugar. Unfortunately, he won't gain much weight until his BS is under control, though. His body isn't absorbing the sugar, so all the food he eats isn't going anywhere but out his body, or staying in his blood.
He may need to look into injecting insulin, if the pills aren't working.
