thanksgiving leftovers... what have you done?
with two teenage boys in the house, there isn't much left of thanksgiving.
the two things that are still around are the turkey carcass and my sweet potatoes.
the turkey carcass has made its way to my stock pot. i'm making turkey stock for all the soups and stews i'll make this winter. i'm hoping for two quarts of stock.
the sweet potatoes (NOT candied) have been divided into single-size portions and frozen. some will be used in breads while others will just be defrosted and enjoyed... since i'm the only sweet potato fan in this house.
what about you and your left overs?

DS (almost 4) likes chicken "pie pie" (pot pie) so I made one with the leftover turkey, box of mixed veges and a can of cream of chic/mushroom soup that was leftover/overbought for the GB casserole - SO GOOD!!!
I did reheat the turkey in some chicken stock so it didn't get dried out - I think that helped.

I made a casserole with all of our leftovers.
I combined the leftover turkey and stuffing and layered the bottom of a Pyrex dish (you can also add your leftover veggies, but we didnt have any). Then I put the leftover mashed potatoes on top, and sprinkled some cheddar cheese, and put it in the oven on 350 for 15-20 min or until warm. It's like a thanksgiving sheppard's pie

I make turkey enchiladas with any extra turkey...turkey, green enchilada sauce, a little turkey gravy, black beans, leftover corn, cheddar cheese wrapped in tortillas and covered in more enchilada sauce and cheese. I also make breaded potato patties with mozzarella inside with my leftover mashed potatoes.

I just made turkey noodle soup. It was awesome. So flavorful. Used the carcass (hate that word!) which was stuffed with garlic, onion, carrots, celery and thyme and rosemary sprigs. Added more carrots, celery onions and herbs, lots of salt & pepper and water to cover. Boiled and then simmered for a few hours. Strained. Vut soft veggies and turkey off the bone. Added noodles (on the side or they get mushy). Addd pecorino romano to my bowl. Delicious!

We make stock with the bones and the dark meat that's left

Leftover sandwich- bread w/mustard, mashed potatoes, stuffing, and turkey heated up....so freaking yummy!

I have been making the best sandwiches for myself. . . i had it three nights in a row LOL
throw some turkey in the frying pan, cover it in gravy to heat up and then at the last minute cover with shredded cheddar cheese until melted
then i make garlic bread, throw it on there with some bacon and voila! amazing dinner lol

We had Turkey Pot pies with Cranberry Salad on Monday
We had the leftover butternut squash, mashed sweet potatoes, and green bean casserole with BBQ Skirt Steak last night
Tonight I'm shredding some of the turkey and adding chopped celery, onion, apples and craisins and tossing it all with a Red Wine Vinaigrette for Turkey Salad Sandwiches with chips
If there's any turkey left after that, I'll use it for sandwiches for lunch. I like to use a Flat-out wrap and spread a laughing cow light cheese on it instead of mayo and then just put turkey and some cranberry and roll it up...YUM!
I need to figure out a use for my leftover acorn squash
