Tip for cooking chicken fingers for toddlers
I've always just made chicken fingers with bread crumbs, but I started putting some corn meal in there, half corn meal, half breadcrumbs. They are soooo much better. The boys enjoy them so much more! The crust just tastes so much better.
Just offering that idea for anyone who has kids that like chicken fingers!

Thanks for sharing. I actually just bought cornmeal to fry calamari for New Year's Eve...have to try it with some chicken.

I did that a couple of weeks ago, DD didn't care for it. I don't know if it was because the crust was too dry or something.
Last week I made them using corn flakes though and she devoured them!

I do this with pork chops and it's sooo good!

I forgot to write before, do you do flour before the egg? That makes the egg stick more to the chicken and makes it not dry out.

I just made my own chicken nuggets for Riley last night- she didn't get to try them yet cuz I made these after she went to bed. I tasted them- they're pretty good!
Buttermilk-bathed Chicken Nuggets (from SOS the Six O'Clock Scramble to the Rescue, Aviva Goldfarb. Also wrote my fave- the Six O'Clock Scramble).
1/2 cup reduced fat buttermilk 1/4 tsp garlic powder 1 cup bread crumbs (or use seasoned for a flavor boost) 1/4 cup grated Parmesan cheese 1/4 tsp salt 1/8 tsp black pepper 1 1/2 lbs boneless, skinless chicken breasts 1/2 cup bbq sauce or ketchup for dipping
Preheat oven to 400 degrees, spray a large baking sheet with non-stick cooking spray.
In a shallow bowl, whisk together the buttermilk and garlic powder. (you can add a pinch of cayenne pepper to the buttermilk mixture for a flavor kick) In another shallow bowl, combine the bread crumbs, cheese, salt and pepper.
Cut the chicken into nugget-size pieces, dip each piece into the buttermilk mixture, and then coat it well in the bread crumb mixture. Put the pieces on the baking sheet.
Bake the nuggets for 15 to 20 minutes, until they are just cooked through and lightly browned, flipping once after about 10 minutes. Serve nuggets immediately , or refrigerate them for up to 3 days, or freeze them for up to 3 months.

Frankie loves when I make them with Bisquick...the recipe is on the back of the box! They are YUMMY!!
