Tonight's dinner made Cailen grunt and say "MMM!" with every bite!!
I love frozen spinach - I'm weird - so I decided to make some frozen spinach with cheese - I put margarine and soy cheese on it so I can have some too - american cheese - and after defrosting the spinach I melted the cheese on it, and gave it to Cailen...
His eyes practically bugged out of his head he loved it so much - it was the consistency of spinach dip... just wanted to share for the moms who have picky eaters and want to get some veggies in them!!!

Don't you love when they make that noise?
DS will "Mmmmmm, Mmmmmmm, Mmmmmmmm" in between shoveling the food into his mouth. Our boys already eat like teenagers I'm going to have to have Trader Joe's send a separate tractor trailer to my house in 15 years
Can you do "fake eggs"? I have a VERY simple and quick spinach quiche recipe. I make it in muffin tins so I have individual servings for DC's. Oh, and it freezes well. FM me if you want the recipe.

Hopefully Cailen stays this way. DD got all excited over peas and carrots that she was shoving in her mouth. I couldn't imagine what would happen with cheese on it

I think LIza is vegan so no animal products for her, including eggs. I'm not sure if "Eggs beaters" can be consumed by vegans or if there is a vegan alternative.
I'll find the recipe and post. I made some more today... I was on a batch cooking frenzy.

Thanks...I think Egg Beaters still has egg in it or some sort of dairy. DD has a dairy and egg allergy so I can't have them. I thought it might be something else. Althought they have egg subsitutes that you can make yourself.

Spinach or Zucchini Quiche
This is my MIL's recipe. It freezes very well. Makes one round quiche or 12 small muffin sized quiche
1 lb. bag of frozen chopped spinach or 3 cups chopped fresh zucchini (You do not have to defrost and strain out the water, just open bag and dump in the bowl)
1 lg. diced onion or a large handful of frozen chopped onion
1 cup Bisquick (I use Trader Joe's Multigrain Baking Mix, all natural)
1/3 cup oil
1 cup any grated cheese
4 beaten eggs
1 tsp salt (I leave this out for the kids)
1 tsp parsley flakes
Method:
1. Combine all ingredients, mix well.
2. Pour into greased pans (I spray mine with olive oil)
3. Bake at 350 degrees for one hour or until well browned.
***The above should make 12 muffin size quiches. After they are cooled, pop them out and they freeze very well. Or you can use one regular pie plate. It freezes very well.
If you desire you can also add ham. I sometimes add small diced pieces of Trader Joe's chicken sausage.
See... no chopping

Cailen is vegetarian, not vegan, so I can make it for him - there is a completely egg free replacement called Energ Egg replacer - you have to mix it with water, but egg beaters are still egg whites
