ugh, they totally bombed test
I only graded 2 out of 5 classes so far and the average grade is probably like a 75. They made the same kinds of mistakes, so I guess I didn't teach that part very well. What would you do? Do I grade on a curve? Throw the test out? Double the project grade on the same topic to make up for it?

hmm, personally I wouldn't change the way it's graded.
Perhaps you should reteach the part that most students got wrong. It's essential they learn to do it properly... and let them redo those questions and get partial credit for getting them right (since it's a retake).
That's probably what I would do.

Usually I shoot for a class average of 80.
After I am done grading the test, I then make up a "hit list", which has the most commonly missed questions on it. The students work on it as a Do Now and then we go over the answers. I clarify/reteach misunderstandings.
If the class average is low, I usually then give a re-quiz one or two days later on the commonly missed questions, changing the wording, but asking the same main ideas.
Also if I notice almost every student got a particular question wrong, I have thrown it out before as it was probably unfair.

Re: ugh, they totally bombed test
I see nothing wrong in curving, if you do it correctly...since technically the best score achieved should be in the top percentile (a perfect SAT score or a 5 on the AP doesn't mean that they got every question right - even the Regents exams are curved) and then you are just assigning a number to it (which happens to be a percentage, but it doesn't necessarily have to be out of 100% correct, it's out of the number of questions the best score got correct)
I would find the median out of all the classes and make the an 80 or 85 (whatever you feel the ave should be) and let the other scores adjust accordingly.
