Vegetarian Chili recipes?
I did a search and didn't see any. I have great recipes for chili but they include meat. I guess I could leave out the meat but curious to see if anyone had a good recipe specifically vegetarian. Thx.

ME! It's SO easy too - I know it looks like a lot of ingredients, but all you have to do is throw them together and it's delish!
1 tbsp. canola oil 2 cups chopped onion 1/2 cup chopped yellow bell pepper 1/2 cup chopped green bell pepper 1-2 cloves minced garlic 1 tbsp. brown sugar 1 1/2 tbsp. chili powder 1 tsp. ground cumin 1 tsp. dried oregano 1/2 tsp. salt 1/2 tsp. black pepper 2 16 oz. cans stewed tomatoes (not drained) 2 15 oz. cans black beans (rinsed & drained) 1 15 oz. can kidney beans (rinsed & drained) 1 15 oz. can pinto beans (rinsed & drained)
Heat oil in dutch oven or large pot over medium-high. Add onion, bell peppers, & garlic and saute until veggies are tender (5 or so minutes). Add sugar and remaining ingredients and then bring to a boil. Reduce heat, and simmer for 30 minutes - stirring occasionally.
It makes about 8 cups - so of course you can just make half.. but it's also great for lunch the next day
Serve with (optional of course) shredded cheddar cheese, sour cream, chopped scallions, etc. as toppings.
