Re: Vegetarian recipes
Lentil soup is a good one.
Grilled Portobello Mushroom burgers.
I am a vegetarian and my wife makes a lot of great stuff but it wasn't until this exact moment that I realized how many of those recipes have tomato base. LOL
Barilla has a great recipe for Rotini with Zuchinni. Google that!

Thank you. I do make lentil soup but never made portobello burgers. I am going try making these.

Re: Vegetarian recipes
I make portabello fajitas
the portabello is the "meat"
then peppers, gauc, and what ever else you like (I am vegan- so I don't do dairy)
I wrap them in lettuce- I also don't eat gluten- so you can do regular wraps
I eat Quiona- I cook veggies in the quiona
I saute veggies in a pan- onion, zucchi, peppers, eggplant
mashed califlower and quiona burgers- (whole foods has them- so yummy- soy gluten and dairy free)
I always have a big salad every night as well

Re: Vegetarian recipes
Baked Lemon Pasta - you could omit the parmesan
Zucchini, black bean and rice skillet - omit the cheddar
Spiced carrot ginger soup
Roasted asparagus salad
Warm brussels sprouts with couscous - I omit the bacon

Re: Vegetarian recipes
My favorite thing is a huge salad with lots of different things in it. I like a mix of kale, spinach, bok choy and then add different combinations of the following: beans ( this always goes in), avocado, chopped peppers or tomatoes, roasted string beans , flax or sunflower seeds, a drizzle of cheese, nuts etc.
Homemade veggie burgers with a side of vegetables
Quinoa with an assortment of vegetables inside
Tempeh or tofu stirfry with veggies and brown rice
Lentil soup
Vegetable soup
Ezkiel sprouted grain pasta with tons of veggies
Sprouted grain wraps ( Ezkiel ) with beans and veggies
