Veggie Kebabs
What veggies would you use, and do you need to brush them with oil before cooking?
would marinating the veggies, or brushing with salad dressing be good or overkill?

I like to use vidalia onions, red and green bell peppers, tomatoes and mushrooms.
Sometimes I brush with olive oil, sometimes I don't. I think I like it better with the olive oil, but there isn't a tremendous difference honestly.
I have never tried marinating the veggies in salad dressing, but I don't see how that would be overkill. Maybe do some plain and test some out in the dressing, so then you'll know!

I use a lot of zucchini, squash, onion, tomato, eggplant, mushroom and peppers.
I do use olive oil because I find that herbs 'stick' better when I brush them.
I generally have a small bowl of olive oil with a brush and a small bowl of salt and herbs. I'll brush with oil, sprinkle with my herb mix and set it on the grill - then repeat when I rotate. Sometimes I'll just cut the veg up and put them in a large bowl WITH the olive oil and herbs/salt before I skewer and cook them. After cooking I will often take a small amount of balsamic vinegar and drizzle over the veg for a pop of freshness.
I have never marinated my kebabs with dressing, but I do regularly marinate portobello mushrooms before grilling, so I don't think it would be a bad thing.. I just think it might make the veg taste less..'pure'? Does that make sense? It never hurts to try and see if you like it!

I have made them with onions, tomatoes, peppers and potatoes. I do marinate them and then brush the marinade on them while they're grilling.

I would do onion, peppers, zucchini, mushroom, grape tomatoes, and basically anything else I had. You could lightly brush them with evoo, kosher salt and pepper. Or just do the s&p. If you do them on the grill, I feel like you don't need to do much to them - less is more in this situation. Oven I would do a little evoo.

I cute them all up and put them in a bowl, then drizzle with EVOO, add garlic, pepper, etc and mix them together and let them sit.
I like to use red onion, green and red peppers and mushrooms.

I do Vidalia onion, red pepper, zucchini, grape tomato, mushrooms & baby red potato, but I boil the red potatoes first. I marinate them in a dressing of olive oil, balsamic, garlic, salt & a little sugar

I usually do onion, red pepper, green pepper, tomato and mushroom.
I usually spritz the kebab with a little no-stick spray or EVOO before I cook it so that it doesn't get too dried out.
