Weekly menu - 10/12
Post your weekly menus!
Ophelia - you get a break this week! But DaniRella, I'm recruiting you! (and rojerono... of course I want yours too)
Dh was away for the weekend so I have no good weekend meals!
Sat was Chinese takeout... Sun was leftovers.
Mon - "Special Salad" - (romaine, cucumber, tomato, soppressata, provolone, cubed fresh mozz, and tomato wedges with oil and vinegar)
Tues - New England clam chowder with warm, crusty bread
Wed - Burgers with mixed greens salad and maybe some oven fries
Thurs - Pasta with roasted veggies & sundried tomatoes

Sun- pasta with chicken and broccoli (only ate half of it)
Monday- turkey sausage and bean stew/chili in the crockpot
tuesday- the rest of the pasta from sunday night
Wednesday- rest of the stew from tonight
thursday- steak and some kind of veggie
Friday- out
saturday- out
so, really only 3 nights that i have to cook out of the week not bad!

Monday--Italian baked chicken cutlets, parmesan couscous and steamed broccoli.
Tuesday--Special grilled cheese (provolone and tomato on roasted garlic baguettes) with homemade roasted tomato cream soup.
Wednesday--Crockpot chili.
Thursday--Cajun chicken cutlets, roasted potato and sauteed peppers and onions.
Friday--Baked ziti with chicken sausage, garlic bread and salad.
Saturday--Leftover chili.
Sunday--Mom's house.

We are away right now, will be home tomorrow- I know I am def making a boneless turkey breast, stuffing, veggie. I am def. making soup- Will not know till tomorrow when I am home.

Roasted Garlic Grilled Cheese:
1 roasted garlic baguette (I find it at Stop n Shop..it has whole cloves of roasted galic, not for the shy!) 2 tsp. EVOO 8 slices low-fat Sargento Provolone 6 thick slices of tomato 1 tsp. Italian seasoning Fresh basil
Split open the baguette. Drizzle bread with a little bit of oil. Layer tomato and cheese with basil. Sprinkle with Italian seasoning, drizzle remaining oil. Place in a skillet or grill pan that is sprayed with Pam. Let cook over medium heat for a few minutes, then place a heavy skillet on top of sandwich and let cook till crispy and cheese is thoroughly metled. HEAVEN!!!
Creamy Tomato Soup
1 tablespoon extra-virgin olive oil 2 onions, sliced 3 cloves garlic, smashed and peeled 1 package vegetable broth 2 cans Italian plum tomatoes, drained 1 can tomato sauce 1/4 cup vodka 6 sprigs flat-leaf parsley 1 teaspoon salt teaspoon sugar 2 cups half-and-half
In a medium skillet, heat the olive oil over medium-high heat. Add the onions and garlic and cook, stirring often, for 30 seconds.
Add the broth, tomatoes, tomato sauce, vodka, parsley, salt and sugar to the slow cooker; add the sauteed onions and garlic. Cover and cook on high heat to stew the tomatoes, 5 hours. Discard the parsley sprigs.
Using an immersion blender or a food processor, puree the soup in batches (be careful-the liquid is hot). Stir in the half-and-half. Cook in the covered slow cooker on low heat until heated through, 20 to 30 minutes.
I know you're pregnant, so you can omit the vodka
Cajun Chicken
4 thin sliced chicken cutlets Every seasoning you own 1 tbsp veggie oil
Place chicken and oil in a Ziploc baggie and add ANY spices you like, I use poultry seasoning, grill seasoning, garlic powder, onion powder, italian seasoning, salt/pepper, lemon pepper. Combine as much as you like, toss chicken around, and stick in fridge for about 20 minutes (longer if you can). Grill on a George Foreman or cook in skillet.
Roasted Potatos, Peppers and Onions
8 small golden potatoes 2 small red onions 2 small green peppers Salt and pepper Lemon pepper Seasoning Salt 2 tbsp. EVOO
Dice up potatos, julienne the pepper and cut the onions into quarters and toss with all remaining ingredients. Spread evenly on a sheet pan and cook at 450 for 35-45 minutes, depending on your liking of doneness. Especially yummy when mixed with some balsamic too.

Sunday - MIL's Monday - Nothing.. we had a HUGE lunch. Tuesday - Lamb Curry, Rice, Mango Lassi Wednesday - *Blue Plate Special* Turkey Meatloaf, Mashed potatoes, gravy, green beans and gardeniera. Thursday - Chicken Souvlaki, greek salad, toasted pitas Friday - Cod with stewed tomatos & onions, roasted squash, spinach & cucumber salad. Saturday - Simple Roast chicken, Rice, gravy, asparagus and a green salad.

Thurs: maybe tabbouleh and hummus with pita chips or a bowl of cereal DH is taking a late class
Friday: Yankee game
Sat: Chicken and Broccoli StirFry over Fried Rice

Monday: tortellini w/ cream sauce and peas.
Tuesday: Beef stew w/ salad
Wednesday: pasta w/ roasted vegetables and marinara.
Thursday: Mexican shepards pie, salad
Friday: glazed ham, sweet potatoes, baked broccoli
Saturday: Split pea soup and paninis

Hayley..dh isn't giving me a pass so you don't have to either I am taking it day by day though, so I don't have it planned past today. we haven't gone food shopping this week either, so it's kinda tough.
Sun: dinner out
Mon: old standby, chicken soup with carrots, spinach and tortellini, warmed baguette with butter
Tues: roast beef shoulder with potatoes and carrots...with whatever veggie I pick up from the farmers market at lunch today.
Wed: TBD
Thurs: TBD
Frid: TBD

Tuesday: I got a simple recipe for this Spanish beef stew but I am making it with Polish seasoning instead so I guess its Polish beef stew, and rice.
Wednesday: my first attempt at pasta fagioli!
Thursday: mama cooks, brother and sister coming over.
Friday and Saturday: TBA!

monday- we had.. omg i dont remember tuesday-pork tenderloin with garlic string beans wednesday- spanish chicken and rice ( arroz con pollo) thursday- steak and onion sandwiches friday-nothing planned sat- dh's highschool reunion sunday- going to the farm with friends we'll prob eat out
