Share your weekly menu - 9/26
For Lisa and anyone else!
(Rojerono... Ophelia... you know you want to)
Here's ours:
SAT - Rotisserie chicken with buttermilk mashed potatoes and steamed broccoli
SUN - Mixed greens salad with cucumber, tomato, seedless grapes, candied walnuts, granny smith apple, and bleu cheese with a raspberry vinaigrette - some sliced chicken breast on top
MON - Rotisserie chicken with couscous (with lemon zest & scallions) and sauteed mushrooms
TUES - Prosciutto, manchego, and fig jam panini with bowtie caprese salad (just bowtie pasta, chopped tomato, basil, and cubes of fresh mozz. with some garlic, oil, and balsamic)
WED - Tortellini with red sauce and parmesan baguette
THURS - Double-cheese and prosciutto calzone with marinara (for dipping) and mixed greens salad (just mixed greens, sliced cucumber, tomato wedges, and fresh parm. shavings)

your food planning always sounds so delish. i think i am going to make a very similar salad this week since i don't have walnuts, but have everything else.

Tonight: Dinner at MIL's.
Monday: Pork Tenderloin with dijon, garlic and rosemary/thyme rub, oven roasted potatoes, Green Beans Almondine. Dessert is Apple Crisp with Fresh Unwhipped Cream.
Tuesday: English Muffin Pizzas and tossed green salad. Dessert is leftover Briermere pie (Raspberry Cream!)
Wednesday: Homemade Veggie soup, Grilled Cheese Sandwiches. Dessert is milkshakes.
Thursday: Chinese or Japanese Take Away Friday: Ravioli with red sauce and bracciole, homemade garlic foccaccia and Green Salad with Balsamic vinaigrette. Dessert is ginger snaps with apple cider.
Saturday: Chicken stew with noodles and biscuits. Tomato salad. Dessert is homemade apple fritters.
Yah.. in case you sense a theme... we picked a ton of apples yesterday and bought tooooo much cider! And.. I'm lazy.

Sunday: bean and veggie salad with prawns
Monday: Barramundi (it's a white fish here) with olives, tomatoes and white wine with cous cous
Tuesday: Buffalo Chicken salad with a fat free dressing
Wednesday: Jerk Chicken with a pineapple salsa
Thursday: Middle Eastern prawns with cous cous
Friday: not sure, maybe a restaurant

here's mine! though 9 months plus pregnant...I have nothing on you girls.
Saturday: roasted chicken with carrots and potatoes. corn muffins (I have been in the mood for them lol)
Sunday: chicken soup (used left overs from Sat's chicken) with red swiss chard, carrots, celery and farfalle pasta. warmed baguette with butter.
Monday: brats and sauerkraut braised in dark beer, sauteed kale, mashed red potatoes
Tuesday: beef chii, roasted butternut squash, zucchini, corn bread

Seriously.. you and Hayley AMAZE me. When I was pregnant I lived on pizza and mac & cheese.
And you can totally move into the house after the baby is born - but I'd probably spend all my time cooing and gooing at the little one instead of cooking!

Ooooh, everyone's meals sound delicious!! Sat- dinner at Mom's
Sun- Grilled chicken breast and yuco w/ mojo (cuban side dish)
Mon- ground turkey swedish meatballs over whole wheat egg noodles,
Tues- Indian spice chicken breasts, brown rice, slalad
Wed- Mexican fish (cod baked with crushed corn tortilla chips and salsa and topped with sour cream and diced avocado), salad
Thurs- Sausage and pepper heroes
Fri- shrimp and scallop stew with garlic bread and salad

DH and I are boring!
We make 2 meals on Sun and eat them like this:
Sun: greek salad: grilled chicken, lettuce, tomato, peppers, onions, olives, feta cheese, pita bread
Mon: pot roast, potatoes, carrots, green bean salad
Then Tues we repeat the Sun dinner
Weds we repeat the Mon dinner
Thursday is a free for all in the fridge
Friday order in
Sat eat out

Sunday- Rotissiere chicken, baked sweet potato, green salad, challah bread Monday- Had family over for Yom Kippur break the fast. Tuesday- Crockpot sausage and peppers and onions over pasta. Wednesday- Boneless skinless chciken thighs marinated in terrayaki and orange juice with wild rice and broccolli. Thursday- Take out night. Friday- Crockpot spareribs trying out a new recipe- w/ apricot jam and soy sauce, got the recipe from a lady in BJ's while I was waiting for the rotissiere chicken to come out.... Saturday- Going out before the Islander game.

I make a similar one with orange juice for pork chops that is YUM. the longer the meat soaks, the better it tastes.
here is a recipe for a garlic mojo that is BEGGING for yucca
For mojo de ajo 6 garlic cloves, minced 1 tablespoon vegetable oil 1 cup fresh orange juice (from 2 oranges) 1/4 cup fresh lime juice (from 2 limes) 6 fresh Thai chiles (red or green), seeded and minced, or 2 to 3 serrano chiles (including seeds), minced 1/2 cup thinly sliced shallot (4 small) 1 teaspoon kosher salt

I gotta say I LOOOOOVE cooking but lately i havent had the time to spend on planning my menus due to being a working mom with an 8 month old. my dh works from home and takes care of her so as soon as i get home i take over - and i usually end up toting her around while i cook ,so my meals are still made from scratch but less elaborate! and ive been drawing blanks when it comes to planning for the week b.c i have 1000 other things going on!
anyhow, vent over! my two meals planned so far:
tuesday night- chicken cacciatore wednesday night- beef stew with quinoa thursday- i have frozen tilapia filets so i'll think of something!

I buy the frozen yuca from goya and boil the whole bag in a pot using their instrctions. Once its done I dran then yuca and put it back int he pot. Then I take 1/4 cup of olive oil and add the juice of 2 limes and i tbsp salt and ehat in a frying pan. When its hot I saute 6-7 diced garlic cloves and 1/2 a thinly sliced onion until tender. The I pour everything into the pot with the yuca and mix it.
My mom always makes it for Thansgiving and Christmas and I love it!!!

Mon: Rot. chicken w/ apple stuffing, and broccoli.
Tues: Meatloaf w/ garlic cauliflower mashed potatoes.
Wed: Braised chicken w/ apples, onions, and potatoes. (Rachel Ray recipe)
Thurs: Steak w/ spinach, and sage-butter gnocchi. (Rachel Ray recipe)
Fri: Leftovers.
Sat: Take out.
Sun: Pasta w/ meatballs and sausage.

Just a note about making yuca fries (offspring of Cuban parents here ). You actually want to cook the yuca completely before frying it (boil in salted water). This is done for 2 reasons - it tastes better and yuca can actually make you quite sick if not fully cooked through.
