Sunday: sausage & peppers with Penne Monday: cauliflower mash, bbq chicken thighs, maple glazed carrots Tuesday: leftover sausage & pasta, salad Wednesday: south beach cheesy frittata, DS - Perdue chicken patty sandwich with cheese Thursday: crockpot chicken chili Friday: cauliflower soup and Salad, Frozen pizza for my niece and maybe my son but he does like the soup. Saturday: leftover chili
ETA: Changed Wednesday because I ate Monday leftovers on Tuesday and Fridays menu.

Mon- Big Mac Salad (so delicious- like a big mac in a bowl without the bun) Tues- Tacos Wed- Probably Buffalo Chicken Casserole Thur- ? Fri- take out Sat- out to dinner

Trust me, neither do I. DH does the cooking because he has strict dietary restrictions and he weighs and measures everything he puts into his mouth so he has to control the cooking. (You don't hear me complaining though! ) But sometimes I read these menus and they sound like a 5 star restaurant. And i'm here like- yeah we had a casserole. We had tacos. We got take out 2 times this week and went out to dinner once. LOL

I’ve been a mess this week. Last night we had takeout. I think I’ve made rigatoni with chicken sausage and spinach, tacos, jambalaya, and shrimp scampi this week. I can’t remember. Salmon burgers and sweet potato fries tonight. Tomorrow DH is going out so I’m making Trader Joe’s cauliflower and cheese ravioli which is my new obsession. It’s delicious.

Omg if this is your menu as a mess, how is it when you’re not? Everything sounds delicious.
When I’m a mess, my menu sounds like this: order Chinese, order pizza, mcds, order pasta from pizzeria to act like we are changing it up and then cry at the end of the week with the $$$ we spent

This is what I did so far and plans for the rest of the week.
Sunday: Skinnytaste Korean meatballs with fried rice
Monday: “Marry Me Chicken” (chicken in a sun dried tomato cream sauce— so yummy! Google it. It’s on Modern Honey Blog) with a side arugula salad.
Tuesday: Leftovers
Wednesday: Abendbrot. This time I did a grain bread, spread with some butter, topped with Tyrolean ham, Parmesan and olive oil. Basically open faced sandwiches.
Thursday- That tomato basil chicken recipe that Nell put up years ago.
Friday- Slow oven cooked salmon with spinach and chick peas
Saturday- a soup and sandwich night.

This is a boring week -
Mon: we had super bowl leftover (subs and pasta salad) Tues: marinated baked chicken cutlets, baked potatoes and veggies Wed: spaghetti and turkey meatballs w/ veggies Thurs: probably leftover of whatever we have Fri: Usually go out with friends for dinner or bring in Sat: out for dinner Sun: not sure yet
I don't ever cook on the weekends. Either we go out to dinner or friends, or bring in pizza.

they were all thrown together. The jamabyala wasn’t really jambalaya, it was frozen shrimp, andouille, diced tomatoes and Cajun seasoning over a bag of frozen cauliflower rice.
I made ST arroz con pollo on Sunday and had to throw it out because it was so bad. So we had Thai.
Last night I made wonton soup which was literally boiling broth and throwing in bok choy, soy sauce and frozen wontons.

I'll bite (Im trying to do WW) - pun intended: Sunday was Chilli for superbowl Monday- WW pretzel crusted chicken (thought for sure my kids would love this as its pretzels....but they still refused. dinner time is hard!) Tuesday - leftover for DH (we had a wake to go to, so I didnt eat) Wednesday- sheet pan lite kielbasa with peppers, onions and tomatoes (modified from Skinnytaste) Thursday - Grilled chicken sandwiches and salad (fries for DH and kids probably) Friday: Emily Bites slow cooker korean-style beef tacos and that's all I've planned thus far

Last week I was a mess but didn’t order out. I am really on a mission to lose weight so it was salads, shakes and cauliflower soup last week. Oh and 1 night of sushi.
This week is kind of day by day: Monday - green smoothie shake, leftovers for Dh and Frozen pizza for DS Tuesday - stuffed caprese chicken with Parmesan roasted potatoes
Wednesday - buffalo chicken spaghetti squash boats
Thursday (??)- cheesy frittata & salad, blt for DS
Friday - lasagna for my niece & DS, going out for dinner (Cuban).
Saturday - leftovers, Whatever people want to eat

Lol I don’t make interesting meals either. While I do think we have a lot of good chefs on here, I think the description is key. Example:
Maple glazed carrots - carrots baked in the oven with maple syrup & seasonings
Parmesan & herb roasted potatoes: potatoes baked in the oven with Parmesan and spices
I also found that prepping ahead & the crockpot has given me time to elevate my meals such as seasoning and freezing meat, pre-prep meatloaf the night before, throwing chili, chicken or steak in the crockpot.
