I'm glad to see that I'm not the only person taking advantage of this thread... Some of these dishes are great and I can't wait to get cooking!!! I've now started trying to match up the ads with what I might want to make so I can get great sale prices. A couple of weeks ago I got everything I needed (minus the wine which I already had) for under $10 and fed 4 ppl!!!!!

this week we're having....
salisbury steak ( basically a hambuger cooked in beef gravy, put over egg noodles) with some steamed veggies.
baked ziti- we'll get at least 2 meals out of this ### we do that a lot. make a "big" dish that we get two meals out of, that way thats one less night we have to cook
shrimp stir fry-- using frozen stir fry veggies with some light soy sauce... SOO quick and easy!
and balsalmic and thyme pork chops with veggies

Short week for us - I usually cook 4 nights a week (I don't cook Fri & Sats because we go out, and am usually out one night a week - so that is usually standby burgers for DH) This is the menu this week:
1. Baked breaded pork chops, mushroom risotto, and peas
2. Burgers, fries, baked beans
3. Shrimp & Scallop Fra Diavolo over linguini with a salad
4. Pulled pork sandwiches, knishes

So I haven't gotten out of bed for a day DH was nice enough to bring my laptop and plug it in for me so I can chat on here. I woke up with absolutely no voice today and feel terrible. Anyway, I was just lookiing this thread over and am definitely going to look up some recipes for dishes that I want to make when I'm up and about again. Anyone else have any recipes?

Here's one of my favorite "stand-by" recipes for Paremsan Crusted Pork Chops (from Giada De Laurentis)
2 large eggs 1 cup dried Italian-style bread crumbs 3/4 cups freshly grated Parmesan 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces) Salt and freshly ground black pepper 6 tablespoons olive oil Lemon wedges, for serving
Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere. Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. **I then bake the pork chops in the oven at 350 for about 25 minutes to finish them.**

Some of our usual suspects are:
-Raviolis and sauce -London Broil, Baked Beans and Corn -Lemon chicken, rice and broccoli -Shake N Bake Pork Chops, Rice a Roni and String Beans -Ham, Potatoes au gratin and broccoli or string beans -Tomato sauce with sausages in the slow cooker over spaghetti -Beef stroganoff over egg noodles -Chili in the slow cooker -Dijon chicken, rice and veggie -Salmon with honey glaze, rice and veggie -Parmesan broiled Tilapia, rice and veggie -Tacos -Meatloaf, roasted potatoes, corn -Roasted chicken, potatoes, veggie
Other veggeis -Roasted butternut squash -Asparagus -Brussel Sprouts

Our usual meals are:
Homemade Tacos Pasta with meat sauce Ravioli with regular sauce Shake and bake chicken with bowtie pasta in an alfredo sauce Chicken cutlets lightly breaded and cooked in a little bit of oil Steak in a garlic and terriaki sauce Roastbeef with biscuits Chicken parm BBQ chicken Burgers
Some of our common sides are: Brown Rice Corn Salad Baked Potato Au Gratin potatoes
Those of you that do an a la vodka sauce can you post your receipe? I've been wanting to add that in to my mix.

Sides: Brussel sprouts Steamed vegetable Rice/egg noddles/ spaghetti Mac & cheese

Monday- Grilled Cheese, soup and salad
Tues- Beefy 1 pot pasta dish( kraft foods) sweet potato
Wed- Crock pot Chx...I got the recipe on here from scarlebegoniaon 8/29/06, salad and baked potato
Thurs- Balsamic Chx Lisa on here's recipe from 6/27/07 brown rice and corn
Fri- Lasagna, salad, and garlic bread
Sat- Date night...we go out to dinner
Sun- Joe's choice since his is on MOnday and I have to work

pork chops with sweet sauce (so easy!) lemon chicken chicken marsala pasta w/homemade meatsauce another pasta dish -varies
i try to mix it up - the above are just the easiest to make for me. i like to use everyday food mag for other ideas. one night during the week we'll order in pizza, chinese or go to taco bell or something like that. or we might end up seeing my dad or ILs one night.

my menu for this week
sunday (last night) pasta bolognaise
monday- chicken and potato bake ( just but a couple chicken breasts, some thin sliced potatos into a baking dish- dump some italian dressing on them, and bake for about 40 minutes
tuesday- leftover pasta bolognaise
wednesday-pork chops baked with cream of mushroom soup and a steamfresh veggie
thursday- out to dinner for a friends graduation party
friday- ham steak and veggie
saturday- out to eat
