I crock potted, crocked? Not sure of the right terminology but anyway...beef stew for hubby. I am having leftover salmon, cauliflower, and sweet potatoes from last night. (I don't eat meat but the stew smells amazing through the house!)

Just finished making chicken enchiladas with rotisserie chicken, sauteed onions and mushrooms, rice, and cheese in a tortilla, covered in taco sauce. Mmmm... DH gets home any second now and I can't wait to eat!

I had homemade eggplant made by my mom's friend. It's my favorite ever, and my mom always saves me some when her friend brings it. They live in MA, but my mom transported it when she visited me in NY. It is THAT good!
