What are your easy/healthy meals to feed LOs?
Can you share your favorite easy/quick meals for the family?
The girls eat what I eat but I find myself going to the same things.. some variation of grilled chicken or turkey (meatball/meatloaf) with veggies and whole wheat pasta or brown rice
I make baked ziti and feed them throughout the week or butternut squash mac n cheese
what else? Soups aren't going so well lately.. they just want to feed themselves with the spoon and it ends up such a mess!

What are your easy/healthy meals to feed LOs?
Ill make stew, but strain out the meat and veg so it's not so messy. My ds loves pulled pork from the crock pot.

Grilled chicken!! I made it tonight on sandwiches for me and dh. DS had his with sweet potatoes.

Lately we have been doing a lot of homemade spinach pizzas. DS loves Applegate ham, so I will stack and slice into squares and serve with a warm pineapple raisin dipping sauce. I'll also do butternut squash pancakes (with flax) as a treat for dinner once in a while. The recipe is a bit of a chore since it is from scratch, but they freeze really well. Will your fam eat fish? DS (4) likes to help making homemade fish nuggets or filets. Zucchini/veggie cakes are a hit with both kids (1 and 4). HTH!

Colleen.. I agree, love the grilled chicken idea.. we just eat it all the time. Tired of it.

No fancy recipe! We go the easy route and use either whole grain english muffins, or we like these flatout wraps or pitas. We toast them, then add warm homemade tomato sauce (defrosted from a frozen batch), a tiny bunch of frozen chopped spinach that has been defrosted and water squeezed out, and lots of mozzarella. Then we just melt the cheese in the oven at 350. You can get creative with the toppings, but I like that the kids get spinach this way.

some of the real easy lunches I make are
scrambled eggs mixed in veggies with whole wheat toast
turkey meatballs with ricotta or pasta
whole wheat english muffin pizzas
turkey/cheese roll ups with crackers and humus
tuna fish on toast cut up cucumbers and apples
grilled chicken or baked breaded chicken, sweet potatoes and carrots or green beans

Stew recipe, lol, I usually just wing it.
Beef stew with cubed beef, carrots, celery, potatoes, peas, beef broth, onion garlic, salt and pepper
My ds likes spicy, so ill do a white chicken chili- chicken, cannelloni beans, mild green chils from a can, corn
Ill do like a hearty chicken soup, with big pieces of carrot, chunks of chicken, noodles, celery, onion, etc.
I've done a harvest stew with beef, butternut squash, beef broth and other assorted veggies.
Their easy, I can make a giant pot on Sunday and its good for a few meals or I can freeze it. Then for the baby, I just use a slotted spoon to portion his of the big pieces, and put in a bowl for him. It's usually super soft so I don't mid it's bigger pieces.
